...Star Spangled Cookies...

...a very Happy Independence Day to you!...I am blogging from Panera...where I finally found internet access...the Public Library will let you log on with your card for 30 minutes...so that's where I was Monday...then yesterday...nada...

...anywhoo...we made some Vegan Sugar Cookies...the recipe is from the Vegetarian Times...I've generally had good results using their recipes...

...all the ingredients mixed...it's kinda dry and crumbly at this point almost like a shortbread...

...so I scooped up some crumbly little balls and placed them on parchment paper...then I smashed them flat with the back of a measuring cup...I thought the dough was too crumbly to roll out and this worked really well...

...then I just used a star shaped cookie cutter from my Mom's old set of nesting Tupperware cookie cutters...and put the scrappy edges back in the bowl...reusing these was fine as I hadn't added any flour for rolling...

...then I mixed up the icing from the recipe - without any peppermint...which I actually thought would be nice and cooling...but the Man did not think so...so I left it out...and I didn't have any Vanilla soymilk so I used plain Almond milk and added a little bit of vanilla...

...sprinkled on some festive sprinkles...

...and it really did make about 52 cookies like the recipe said...

...they were delicious...I'm definitely writing this recipe in my binder...

    I love Vegetarian Times...they do have some delicious recipes. I haven't tried the sugar cookie, but I love making cookies and just might give them a try. Yours look yummy.
