...butternut...

squash...
...talk about a super easy side dish...this is it...

...I slice my squash into rounds first and then peel it...it's easier to get the tough peeling off that way...I think...
...then dice...
...spritz with oil...I used olive oil...
...sprinkle some fresh rosemary over...
...and simply bake until slightly carmelized and tender...
...what could be easier...5 minutes prep time...1/2 hour in the oven...and you're done...
...I don't know what it is about roasted vegetables that makes them so delicious...but it's something...

  1. I read that butternut squash can be baked with the skin on and that it gets softened. If you don't want to eat the skin the flesh can be removed easily. This is what I've done since and it works.

    Delicious vegetable.
