...Vegan Tomato Bisque...

...although it's not really soup weather here at all...the man used some of our abundance of tomatoes to make a comforting classic tomato soup...a vegan version of this Saveur recipe...
...subs for this vegan version...Olive oil...Earth Balance...and Silk Creamer...
...first peel some tomatoes...and chop some onion and garlic...
...about 4 cups...
...saute the onions and garlic in the olive oil and Earth Balance...
...pour in the tomatoes, reduce heat and simmer soup for 25 minutes, stirring occasionally...
...Add the vegan cream... and puree with an immersion blender until smooth...
...this was such a pretty and flavorful soup...
...really delicious...

Classic Vegan Tomato Soup

2 Tbs. Olive Oil
1⁄2 Tbs. Earth Balance
1 small onion
4 cups fresh tomatoes
1 fresh bay leaf
1 clove garlic, lightly crushed
2 Tbs. vegan cream

1) peel 4 cups fresh tomatoes
2) chop some onion and garlic
3) saute the onions and garlic in the olive oil and Earth Balance
4) pour in the tomatoes, reduce heat and simmer soup for 25 minutes, stirring occasionally
5) add the vegan cream
6) puree with an immersion blender until smooth
7) season and serve
