...Single Serving Vegan Sundrop Pound Cake...

....at all of the Church dinners here you'll find Sundrop Poundcake...both the regular and the Cherry variety...if you're not from the South...you probably won't know what Sundrop is...
...this is the little individual loaf pan that my sweet sissie sent in one of her many awesome little packages...

...so I buttered it with some Earth Balance...
...and mixed a little flour, sugar, oil...and Sundrop soda...
...just stirred it up until everything was incorporated...
...and poured it into my little buttered dish...
...generally, I microwave these little single serving cakes...
...but since I had the oven on for something else...I just popped it in there for a few minutes...
...it turned out so perfectly...
...moist...and sweet and fluffy...delicious...

...have you ever made a cake featuring pop?...since we found this one...we've also found a recipe for a Dr. Pepper pound cake...sounds good doesn't it?...

Single Serving Vegan Sundrop Poundcake

4 Tablespoons Self Rising Flour
1 Tablespoon Sugar
3 Tablespoons Cherry Sundrop
1 Tablespoon corn oil

In a mug or bowl, whisk all ingredients until smooth. Microwave on high for 1 minute....(or bake in a 350 degree oven until it tests done). Let stand a couple of minutes before serving.

    i do "double duty" in the oven often too....that frugal thing - where did we get that???

  4. Wow, Sundrop. Blast from my past. The guys used to mix it with Jim Beam and it was my job to drink the bottle down to make room for it. Not the most politically correct memory, but it was fun times out camping.
