...we started off the weekend with a tofu scramble...with vegan bacon bits and Violife cheddar...
...then we headed out to the 'garden'...where things are starting to sprout...the Tendergreens are up...
...and so are the Old Fashioned mustard greens...
...and the turnips...we'll be thinning those when the greens are big enough and leaving some to form roots...
...so then I planted 6 more squares...spinach...buttercrunch lettuce...onions...radishes...carrots...and beets...
...got it all planted and watered in...
...then I stowed the seeds away in a cut off almond milk carton...it was the perfect size...
...then we washed the car...
...then headed out for the weekly shopping...
...and got lots of stuff...
...then it was time for some food prep...an Instant Pot full of pintos...
...and while that was cooking I prepped a bunch of collards...
...and roasted some beets...
...and sliced a carton of strawberries...here they're soaking in baking soda as they are not organic...
...Sunday...we went for a walk on the Riverwalk...all of this was underwater after Helene...
...this pond doesn't look any worse for it though...
...the Riverwalk path still had a layer of silt...
...and you could see where they had pushed all the mud off the sidewalks...parts of the Riverwalk still aren't opened back up...
...and all of the vegetation still has a layer of silt on it as well...and everything had a weird smell...
...so I'll leave you with something much more pleasant...our morning glories are still blooming heading into November...they didn't even start blooming until October...and it's a wonder that we didn't pull them up as we thought they just weren't going to bloom...
...but I'm so glad we didn't as they are gorgeous...

Funny, I'm cooking a big pot of dried Great Northern beans right now. I haven't cooked dried beans in a few years but it just seemed like a good choice for this time of year. Love, K
