...Vegan Cookie Salad...

...this dish was present at every Church supper that I went to in North Dakota...and I had never even heard of it before we moved there...

...I don't have an actual recipe for the original salad and I never partook of the salads as they are not vegan...but as far as I can tell the ingredients are:

Vanilla Pudding
Mandarin Oranges
and Fudge Striped Cookies...

...my new favorite grocery store (Kroger) has a store brand of Fudge Striped Cookies that just happens to be vegan...

...so I just mixed up my favorite Vegan Vanilla Pudding X 6:

1 cup soy milk - I actually used a combination of Almond Milk and Silk Creamer 'cause that's what I had...
1 Tablespoon sugar
1/4 teaspoon vanilla
1 Tablespoon cornstarch
1 quick sprinkle of salt

...I added a little bit of yellow food colouring...just for that boxed vanilla pudding look...HA!

...then I began layering it in a big bowl...

...pudding...then oranges...and crumbled cookies...

...just keep layering until you've used everything up...

...and make a pretty little design on the top...

...I know this seems like an unusual combination of ingredients...kind of an oxymoron...but it's really, really good...

...Have you ever eaten a 'Cookie Salad'?...

  1. I have never heard of such a things...but it definitely seems like something that you would discover at a church potluck. I should veganize some of those recipes too.....

  5. I have a little collection going of "salad" recipes from the ladies at my church. My favorite so far- Pretzel Salad... Yours looks delish!

  6. I've never heard of a 'Cookie Salad'. but it looks really nice. I think I might like it better with bananas but I would happily try the orange version.

    I am particularly interested in the vanilla pudding as it looks like, and the ingredients are those of, the 'custard' beloved of us here in the UK. It used to be made from packets of powdered ingredients which were mixed with milk and nowadays it can be bought ready made in cans and tetrapacks.


    Mostly it is poured hot over hot puddings - but it is used in trifle and the favourite of many children used to be hot custard with sliced banana.

  8. Someone requested a "cookie salad." I'd never heard of it. Of course, I always look gor a vegan version. Thanks for coming up with one. I'll have to see if I can find a vegan vanilla pudding and vegan fudge cookies somewhere!
