...the Man spent a few hours making the enchilada sauce from scratch...from some dried Mexican peppers he ordered...and believe it or not it's not too hot for me to eat...
...stuffed and topped with vegan cheese...
...and served with hominy and a salad...it was a delicious meal...

...it was good and I think it would make a perfect thanksgiving dish stuffed into a big seitan roast...

...10.28...Over the Weekend...
...we started off the weekend with a tofu scramble...with vegan bacon bits and Violife cheddar...
...then we headed out to the 'garden'...where things are starting to sprout...the Tendergreens are up...
...and so are the Old Fashioned mustard greens...
...and the turnips...we'll be thinning those when the greens are big enough and leaving some to form roots...
...so then I planted 6 more squares...spinach...buttercrunch lettuce...onions...radishes...carrots...and beets...
...got it all planted and watered in...
...then I stowed the seeds away in a cut off almond milk carton...it was the perfect size...
...then we washed the car...
...then headed out for the weekly shopping...
...and got lots of stuff...
...then it was time for some food prep...an Instant Pot full of pintos...
...and while that was cooking I prepped a bunch of collards...
...and roasted some beets...
...and sliced a carton of strawberries...here they're soaking in baking soda as they are not organic...
...Sunday...we went for a walk on the Riverwalk...all of this was underwater after Helene...
...this pond doesn't look any worse for it though...
...the Riverwalk path still had a layer of silt...
...and you could see where they had pushed all the mud off the sidewalks...parts of the Riverwalk still aren't opened back up...
...and all of the vegetation still has a layer of silt on it as well...and everything had a weird smell...
...so I'll leave you with something much more pleasant...our morning glories are still blooming heading into November...they didn't even start blooming until October...and it's a wonder that we didn't pull them up as we thought they just weren't going to bloom...
...but I'm so glad we didn't as they are gorgeous...

...to Éphée from L'éphémère quotidienneté des repas et autres trucs de magie...Hi Éphée...that eggplant flower is so pretty...and your pumpkin chili pot looks amazing...and the lake in the fall is gorgeous...

...on the reading front...still reading Maupassant...Boule de Suif (ball of fat) is on Gutenberg in French...it's about a town getting ready to be invaded after the army pulls out...it's really about how horrible human beings are to each other...Maupassant has a sort of keen sense of human nature...and again I can see a contemporary theme of how people look for connections that group us together and make us feell like we are better than another group of people...
...for dinner... ...a super simple supper...baked tofu with BBQ sauce...french bread...vegan potato salad...vegan coleslaw and green beans...
...and for the movie we watched another episode of Beyond Paradise...a spinoff from Death in Paradise...

...10.25...Friday Update...
...still working on the backsplash in the kitchen...the Man moved the outlets out...so that the plates will rest nicely on top of the new tile...
...he used these new little lego-like spacers...
...easier than the box extenders that we've used before...
...just a couple of intricate little cuts for this side of the sink...
...all done with the right side...
...painting also continues...I've done the second coat on the lower cabinets on this side of the kitchen...no photo as it really doesn't look that different...one more coat...and then when the Man gets the doors and drawers all finished we can move on to the other half of the kitchen... ...and then the very last thing in the hallway bathroom that was left to do was the caulking...so I caulked around the sinks... ...around the toilet...that required some contortions...haha... ...and around the base of the doors...

...10.24...Delicious Vegan Food we ate...
...this is a quick dump cake that I had at Church potlucks in North Dakota...you just take a vegan boxed white cake mix...and mix it with an entire can of mixed fruit...that's it...easie-peasie...
...it bakes up perfectly...
...I love that crispy edge...
...and what could be easier...
...I made it in a round springform pan...but at North Dakota potlucks it was almost always in a rectangular dish and cut into squares...but also often the only vegan dessert option...
...it's perfect with a cup of tea...
...and this is just a nice drink that I whipped up one afternoon...pretty much equal parts of all the juices I had in the fridge...so...apple, pomegranite, cranberry and ruby grapefruit...

...I've just started Little Sissie's Aurora Borealis in royal blue...
...turned under the neckline...
...it's such a neat process...
...and I love the look of the turned down neckline...
...Big Sissie's Aurora Borealis...the navy one is just onto the stockinette stitch body and sleeves now...so I'm going to enjoy the colourwork on this one...

...10.21...Over the Weekend...
...for breakfast I made us a couple of vegan cheese biscuits...
...just my regular southern biscuit recipe with a generous handful of vegan cheese...this is the new one from stuffmart...bettergoods cheddar...
...these were a delicious way to start the weekend...
...lots of things were bought...
...Aldi has Almond Nog...for Christmas I guess...
...after I got that stored away...I made a batch of vegan feta...I love this soo much...I think I'll be turning a block of tofu into vegan feta at least once a week...
...and then pretty much the rest of the day was spent outside...
...our sedum arrived earlier this week...so we needed to get it into the ground...
...it's...and we're hoping it will be the perfect replacement for the failed lavender experiment along the driveway...
...and then a quick trip to lowes to get several bales of pine straw...and we smooshed that up under all the bushes that we had trimmed...
...and all around the front of the house...
...it looks so nice and well manicured now...I'm going to wait until the leaves fall from the oak tree beside the house before I do that side because the leaves will just cover up the pine straw...
...and our new little electric tiller had also arrived earlier this week...so we had this gigantor green box sitting in the dinette awaiting assembly...
...the Man tilled up the new square foot garden bed along the fence where we took out the sea oats...
...and another stip along the side of the house where the bulb garden was...and we're going to plant blueberry bushes there...if they ever get here...FedEx says they were delivered...but they definitely were not...so the Man is going through their process to make a claim...
...the ground beside the house is rather poor...and very rocky...
...one of our rattlesnake bean pods must have falled to the ground and sprouted...
...and these vincas are still blooming gorgeously...they have outperformed almost all of our other flowers...so we're definitely getting them again next year...as these were all volunteers from last year's plants...and I'll do a better job of moving them around next year if they sprout up like this again...
...getting the blueberry bed ready...we mixed in 3 ft³ of peat moss...and we'll put another inch or so on top after we plant the bushes...
...so that looks quite a bit better...
...then I sectioned off my square foot garden bed...and planted a bunch of fall greens...
...tendergreens, old fashioned mustard greens, giant, chard, beets, and carrots...
...nice and tidy...I'm going to fix up the beds a bit more before spring...add a border and maybe some grid lines...
...then right at dusky dark...we started decorating for Halloween...the Man hung the orange icicle lights...
...and replaced the overhead lights with these 'flame' lights...you can't really see it in the photo though...
...and I put a little row of solar pumpkin heads along the sidewalk...
...and got out my four decorative Jack-O-Lanterns...
...this pretty one was a gift from Amy...
...and I got this terra cotta one at Goodwill...
...and the two at the door have to be plugged in and we've had them since Our Airman was little...
...so now we're ready for Trick-or-Treaters...
