Happy Halloween!

...the Man spent a few hours making the enchilada sauce from scratch...from some dried Mexican peppers he ordered...and believe it or not it's not too hot for me to eat...

...stuffed and topped with vegan cheese...

...and served with hominy and a salad...it was a delicious meal...

PS...we voted early yesterday...it wasn't a bad wait...about 15 minutes or so...
