...Over the Weekend....

...adjusting to the "new normal" as empty nesters...
...so just The Man and me for weekend breakfast...so I tried a new recipe using half whole wheat flour and half oat flour...
...I thought they were fine...
...served with vegan sausage...and maple syrup...but the Man was not a fan...so I think I'll go back to my regular vegan pancake recipe...
...the weekly vegan shopping was done...
...and we needed lots of things...
...I didn't really shop last week before the wedding...
...so this was a big shopping trip...
...Aldi had these two frostbitten plants on sale for 99¢...and I'd been wanting to get more oxygen into our nighttime air...so I bought them both...
...of note in the vegan shopping this week...fresh squash was available...both the yellow...
...and zucchini...
...so as soon as the groceries were stowed...I peeled the zucchini for a casserole for dinner...
...just roughly cut into 1/4 inch slices...
...sliced a yellow onion...
...and sprinkled that on top of the squash...
...my Mom's recipe calls for an egg mixed with milk...but I used almond milk and a little bit of flour for thickening in this vegan version...
...just whisked that up with a little black pepper...
...and poured it over the squash and onions...
...I keep my vegan cheeses in the freezer...because I never can seem to use it all up before it goes bad...
...so I took a slice each of Daiya cheddar and the Go Veggie vegan...
...and still frozen...so it's nice and hard...gave it a rough chop and sprinkled that on top of the casserole...
...I cut up a few of those baby cucumbers to snack on while the casserole baked...
...and then it was ready for dinner...it was delicious...
...then I turned my attention to the plants...and cut off all of the blackened leaves...
...and separated that big Pothos into 4 smaller ones...
...the ivy wasn't that big...
...so I separated it into 3 pots...and repotted my Christmas cactus (given to me by a sweet gardening parishoner)...into the leftover pot that the ivy came in...
...and put one of each on the empty shelf in Scout's old bedroom...
...and put an ivy and a pothos on my nightstand...and just a pothos on the Man's...
...and one of each on the nightstands in the guest room...

      ...Thank you...but no...the Man's Grandma made that for us...years and years ago now...and it's always been in the guest room...so it doesn't see much use...

    ...yep...it's weird to walk into the pretty much empty room...I remember thinking that about Robert's room...when you repainted it and made it into an office...transitioning...
