...Over the Weekend...

...we got up fairly early...haha...we'd had a late night of card playing and visiting...and went and picked up The Airman's Wife...we had breakfast first...but neither I nor my sissie snapped a single photo...very unusual...I know...

...but then we packed up the car...and left on schedule...
...I snapped a photo of the mountains as soon as they came into view...as I always do...
...we arrived at the fellowship hall early...so we had a little bit of time to peruse the many years of reunion photos before the festivities began...

...here are a few blasts from the past...
...the Man and I in an 'engagement' reunion photo...I'm showing off 'the ring'...haha...and I'm only posting a photo of him because I think he's unrecognizable..hahahaha...
...this one is from one of the 'picnic' reunions...I'm on the left in front of Granddaddy...not sure where the Man is...he must have opted out...and we noted in the scrupulous notes for each reunion's attendees...that the Man is sometimes listed as in attendance but (not pictured)...

...and a funny thing about that sundress...Sissie and I were talking on the way home about the fact that I have clothes that are over 20 years old that I still wear...and here's photographic proof...I still have that sundress...and I still wear it...haha!...
...this is not from the photo albums...but definitely a blast from the past...I love it...
...my sweet Mom was one of the organizers again this year...so she made the announcements of births, deaths, marriages, etc...
...and then it was time to queue up and eat...
...the delicious Hot for Food Pasta salad..
...my overfilled plate of vegan food...

...Sissie's baked beans, a chick pattie from home...a container of vegan squash casserole my Mama made especially for me...green beans (yellow ones really) from her garden...pasta salad...Mom's coleslaw...and corn...
...now...my overfilled dessert dish...Sissie's Dr. Pepper chocolate cake...she took a cake mix and added a Dr. Pepper...that's all...and it was so moist and delicious...a couple of brownie bites...and some fruit...
...the entertainment...
...when we got back to Mom's it was pool time...this is the deck that we built last year...
...the water was 'refreshing'...as Mom says...or 'cold' as The Airman's Wife says...definitely fun though...especially the slide now that it's been moved to the deep end...
...we got up early to pick some fresh veggies from the garden...this is the same view of Mill's Knob that I always post...it's so pretty...Mom recently had some dirt added to the bottoms to fill in some low spots so the grass is just starting to grow back there...
...Mom and Sissie hard at work...not really it was a fun and relaxing morning in the garden...
...which is absolutely gorgeous...I was wishing there was okra on these plants...
...there was plenty of squash though...
...Sissie snapped a photo of me picking beans...
...the loot...
...then it was time for the delicious vegan brunch...we tried the Amy's sausage that we made a special trip to Earth Fare (the original one in Asheville...impressive)...but we were not too impressed...Mom's vegan biscuits and gravy...plenty of fruit and my sweet brother's coffee...
...some playtime...
...and Mom went up in the barn loft to get this sweet baby rocker to give to The Airman's Wife...

...and then we packed up the car and headed home...it was a great weekend full of fun and family...

...we celebrated my birthday a little bit early...here I am opening the traveling birthday card...sweet...
...and she got me this gorgeous dish as well...and some jars of her homemade jams...Blueberry and Strawberry...I'm sure you'll be seeing it holding food on the blog...

...NO...Dinner and a Movie...

...my sweet sissie and her hubbie came for a visit on their way to the family reunion...and we spent the evening together...

...we did have dinner...of course...the Man made his fabulous spaghetti...and then we spent the evening playing Phase 10...it was a great visit...
...we also did a little bit of prepping of some food to take to the reunion...I made some brownie bites...
...and some pasta salad...I added carrots, green onions...and some tomatoes and cucumbers that were gifted to us by one of our gardeners...and I made a garlicky dill dressing from Hot for Food...which I just got on my Kindle last week...but kept it separate until the reunion...

...W.I.P. Wednesday...

...I started the gradient stripes because I'm almost out of the purple yarn...
...the plan is to do:

...and then finish the toe with the coffee...

...Tuesdays with Julia...

...after we made the silken tofu...we used it to make Vegan Crème Plombières aux Fruits
...so creamy and fluffy and delicious...
...and all of the particulars are over at The Vegan Version...

...My very first ever batch of homemade silken tofu...

...y'all have seen me make tofu before...but I've always made firm...pressed tofu...which is an entirely different thing from silken tofu...not really that different...they use exactly the same ingredients...it's just a different method...
...I started off with some homemade soy milk...I had soaked the beans overnight and then blended them in the Vitamix and strained the milk through a nutmilk bag...and cooked the fresh soymilk...
...here's where things get different...normally I would mix some epsom salt with water and stir that directly into the hot soymilk...and immediately the milk would separate much like cow's milk separates into curds and whey...and then you strain these solid tofu flakes and press them into a cake of firm tofu...

...but for silken tofu...you rapidly chill the hot soymilk...here I made an ice bath in the sink and set the pot into that...until the soymilk was well chilled...you could of course put it in the fridge...but I didn't want to wait...
...then I transferred the cold soymilk into a pitcher for a couple of reasons...first to make it easier to stir in the epsom salt/water mixture without a lot of sloshing...because what you don't want to happen here is the separation part...and second...just to make it easier to pour it into the molds directly from the pitcher...the trick is to mix the coagulant well without getting any separation...
...so when I poured it into my ramekins...it pretty much still just looked like soymilk...and I set the steamer basket in a large pot of water...and brought it to the boil...and left it to simmer for a few minutes...
...I saved the okara...the leftover soybean paste...it has a really strong soy flavor...so cook it before you add it to anything...but I often add a spoonful or two to cookies and cakes...
...after about 15 minutes of steaming the silken tofu was done...it's swimming in just a little bit of water that separated out...
...but you can see it has the texture of a nice custard...which is exactly what I was going for...
...it's perfect...
...it popped right out of the mold...just like it's supposed to...
...and I'm absolutely tickled to death with it...
...the texture will be perfect for VEGAN CRÈME PLOMBIÈRES...
...you can store it in water...just like the tofu that you buy...

....Over the Weekend...

...I started the weekend off right!...with some mini cinnamon doughnuts...
...this is a little trick of mine to keep that spray oil off the counters and floor...I set the pan on the open dishwasher door and spray it there...then the overspray just gets washed off the door the next time I run the dishwasher...
...ready to bake...I didn't quite have enough batter for the 12th one...I must have overfilled...it's supposed to make 12...and usually does...
...mixed up some cinnamon and powdered sugar...
...and gave the hot from the oven doughnuts a generous dunk in the powdery coating...
...put them on a pretty antique glass plate...
...and served with hot tea...
...they are so delicious...
...perfectly just crispy on the outside and tender and cakey on the inside...I love cinnamon doughnuts...do you?...they're my favorite kind...the Man prefers glazed...but he ate his share of these...haha...
...then I painted the wall in Our Airman's old bedroom...where his aquarium filter had stained it a little bit...I'll do another coat later...
...one of our generous gardeners gave us these big bags of squash/zucchini...and cucumbers...
...so I sorted them by size...these smaller ones for some sweetish...bread and butter refrigerator pickles...I called Mom and asked for a recipe...
...and these larger ones...I'm going to cut lengthwise and make some refrigerator dills...
...complete...I used Grandma's Veg-O-Matic to make the slices and the spears...we got 2 1/2 quarts of Refrigerator Bread and Butters...and 2 quarts of Refrigerator garlicky dills...it really didn't take that long...and now I'll just have to wait a couple of days to try them...
...then...when I was going through the cupboards and fridge...making my grocery list...I found some celery that was past its prime...so I chopped it up for the freezer...
...and found some wilty green onions in the same state...so I gave them the same treatment...I hate to waste food...
...in addition to my regular shopping I stopped here at this farmer's market...
...established 1972...neat...
...so clean and tidy...and everything was well displayed...
...you take a garden basket at the door to put your shopping in...everything that was local was marked local...the Man loves these white North Carolina sweet potatoes...they're pretty rare in regular grocery stores...and they have more of the texture of an Idaho potato...they're never wet on the inside...and they're not too sweet...
...have you ever seen these white cucumbers...29¢ per pound...a fun bargan...
...got everything home and stowed away...
...then I cut up the two acorn squash...they are not my favorite squash...I prefer butternut or buttercup if I can find them...and like the orange sweet potatoes, acorn squash tend to be a little bit to wet for my taste...so I cut them in rings so they'd dry out a bit more...
...I only bought one green tomato...as I'm the only one who likes them...so I sliced that and started it frying ...just so I could snack on it while I was prepping everything else...
...and of course...I roasted the squash seeds along with the squash...
...prepped the leftover bread for some homemade croutons...I had actually put the pieces in the freezer so these are from two different loaves...
...the tomato was ready...so delicious...
...and so were the squash seeds...I put them in a bowl to cool...but devoured them pretty quickly too...
...I fried a zucchini for the Man...as he doesn't like the green tomoto...
...the croutons are just about done...just a few more minutes...
...the squash is done too...
...I made a tomato sandwich with the largest tomato from my basket...there really is nothing like a fresh vine ripened tomato sandwich in the summertime...and we called all of that snacking around...lunch...haha...

Super Easy Small Batch Vegan Mayo

1/2 cup neutral oil
1/4 cup vegan milk
1 teaspoon Apple Cider Vinegar
scant pinch of mustard
salt to taste...I used about 1/4 teaspoon for this small batch...
...blend with a stick blender...
...then I mixed up a 5 lb. bag of self rising flour...I've posted about it before...pre-made SR Flour has baking powder with aluminum in it...and I prefer to make my own so that I can use aluminum free baking powder...and still have the convenience of having self rising flour on hand...
...in the evening we heard such a racket outside the door...and we found this tiny little guy...
...these little green tree frogs make so much noise...they almost sound like a dog barking...really loudly...funny...
...Sunday after Church...the Man and I went to the local Cuban restaurant...this time I got the vegetable torta...grilled peppers onions and mushrooms on their famous Cuban bread...it was delicious...
...and then when we got home...I cut up two and a half of the local cabbages...
...and made another batch of sauerkraut...it should be ready about the time our current jar runs out...
...and finally...for dinner...I just made some microwave potato chips to go with the second half of my torta from lunch...

...so looking back on it...that seems like a pretty busy weekend...but at the time it didn't seem harried at all...
