...Dinner and a Movie...11.15...

...I made a kind of vegan 'hamburger' stew for dinner...
...carrots, celery, potatoes vegan broth...cooked and thickened...with some thyme and bay leaf...then I browned a couple of veggie burgers in Earth Balance and added them whole to the broth...I didn't want them to just fall apart and crumble but keep some texture...
...it was really yummy...comfort food...with some Grandma's mashed, Brussels sprouts (that my sweet sissie left with us before she left on her boat...she cleaned out her freezer)...and come of my sweet M.I.L.'s sweet corn...she brought several pints for our pre-Thanksgiving meal...and there was a lot leftover...

...the stew was really good...and warming...it's been unseasonably cool and windy here...we had lows in the 20's (-5° C)...we don't usually see temps that low until January or February...

...and the movie was Becoming Astrid...I really enjoyed it...it was really good...and subtitled...so not sure the Man enjoyed it very much...it's a story about some people...a beloved author remembers herself as a young single mother struggling to keep and raise her young son... ...what have you been watching lately?...

...Friday Favorites...a bunch of beans...

...the Man went crazy on Amazon...buying beans...lots of different varieties...I can't wait to try them all...
...and he also got some fancy vegan broth bases...a vegan beef one, a vegan chicken one, and just a veggie one...I've actually had these once before when we lived in North Dakota...one of our sweet parishioners got me some at the BX (Base Exchange) in Grand Forks...

...11.13...What I Ate in a Day...as a Vegan...

...for brekkie...after a smoothie...which I didn't photograph for some reason...it was peanut butter and banana and it was really yummy...I had a big bowl of buttery (or Earth Balance-y) grits...
...then for lunch I was craving pizza...so I got some of my homemade vegan mozzarella out of the freezer and grated it...and I also had some vegan pepperoni in there...
...and I made a single serve pizza for lunch...it turned out perfectly...and was just what I wanted...
...really yummy...
...and I had a salad and some grapes with that...
...then for dinner...as often happens...I made a pan of cornbread...
...to go with some beans and greens...I'll post about the beans tomorrow...

...W.I.P. Wednesday...11.13...

...well...the black/white yarn that I thought would pass for grey...actually wound up producing a weird striped effect...
...and also...as I suspected...they are very short socks...anklets really...but that's fine...I'll definitely still wear them...but I think I may be on the lookout for some more grey yarn...

...oh...and sock # 2 is almost finished as well...

...11.9...Over the Weekend...

...this is from earlier in the week...but they finished the new roof on the Parsonage...it looks really good...
...Mom came for another visit...we had a really nice time...
...and she came bearing gifts...as she usually does...her fabulous vegan coated cookies...we usually only get these at Christmas...
...and some dried apples...
...then...we drove down to Columbia with our Airman...where they have a huge Veterans Day Parade...and I forgot my camera...and I need to check the settings on my phone...the Man told me that the photos I sent him from my phone were grainy...
...Our Airman was on his way back to his base and not in uniform...we had a lot of fun though...
...everyone was cheering...
...and it's so impressive when the big equipment rolls by...

...we had lunch together...and all too soon it was time to say good-bye...

...11.8...Dinner and Movie...

...the Airman and the Airman's Wife went out with some friends...and we got to babysit the Airman's Baby...so that was a lot of fun...she is such a sweetie...absolutely no trouble...she entertains herself...just cooing and making her little noises...here she is bathed and ready for bed...
...and a couple of photos of the bath...look at that funny face...
...but once she's in the warm water she really enjoys it...
...anywhoo...we made veggie burgers and home fries...
...and we tried this vintage Heinz ketchup...it was good...but we prefer the regular old ketchup that we grew up with...

...and the movie was The Hound of the Baskervilles...the old Jeremy Brett Sherlock Holmes series from the 80s...it is so good...it was my favorite way back then...and we've been watching the regular ones just anytime as they are only 45 - 50 minutes long...but this one was an hour and a half...so we saved it for movie night...

...Friday Favorites...Dr. Pepper Black Forest Chocolate Cupcakes...

...I got this idea from my sweet sissie...who brought a 2 ingredient vegan chocolate cake to the family reunion back in July...
...the two ingredients for her cake were Dr. Pepper and a chocolate cake mix...and I gathered a couple more ingredients to make these cupcakes even more special...some cherries...and some vegan vanilla icing...
...there's nothing to the cupcakes...just add enough Dr. Pepper to make a batter...and bake...easie peasie...
...then for the Black Forest cherry filling...I put the liquid from the jar of cherries in a pan...and added a little bit of sugar...
...and a little bit of cornstarch to thicken it...
...then added the cherries back to the thicker, sweeter sauce...
...then using a serrated knife...I cut a little divot out of each cupcake...
...leaving a small hole to fill with the cherry sauce...
...just a spoonful with a few cherries in each cupcake...
...and then I popped the little caps back on...
...they're pretty cute just like that...
...but then I drizzled a little bit of vanilla icing over each one...
...they turned out so cute and festive-looking and they were so easy to make...and they were delicious too...

...W.I.P. Wednesday...a little baby boy...

...our next door neighbors are expecting a little baby boy soon...
...so I went through my stash...and found this huge skein of pretty soft blue speckled baby yarn in a box with a previously made little boy blue hat...and another smaller skein of the same yarn...
...I'm pretty sure this was in the bag of yarn that Mom gave me a few years ago that she'd gotten from a friend of hers...and I'm happy to use it up...and when I say it's huge I mean it...it's over a foot across...
...so I just knit a receiving blanket sized square in plain stockinette...
...and then picked up stitches along each side for a simple garter stitch border...
...the little notepad is for my tic marks to make sure that each side is the same...
...and it's such an easy and mindless knit that it was done in no time...
...detail...
...the little hat you've seen before...I need to make another one in pink and one in blue...just to have on hand in case I need a quick baby pressie...
...ready for the gift bag...
...but then I thought I'd make a quick little pair of booties too...you just knit a "T" in garter stitch...
...and then fold one end over the other...
...and then do it again...
...they are so easy and so caa-ute...
...and tiny...and adorable...
