...Dinner and a Movie...

...first of all...I gathered everything to make a Vegan Bundt Cake...and prepared my pretty bundt pan...I call it my new bundt pan...but I've had it since 2010...
...then basically I followed the Betty Crocker Bundt Cake recipe subbing flax seed for the eggs...and adding pudding and oil to the mix...
....and the best thing about vegan cake batter is you can lick the bowl...
...poured that into the bundt pan and baked it for about an hour...
...the kiddos shopped for and prepared dinner...the watched a video on how to properly chop an onion...
...and did a really good job chopping it in about 30 seconds...
...then they prepped some cilantro, lettuce and tomatoes...so now you know where this dinner is going...
...vegan tacos with refried beans and rice...
...it was delicious...
...and then cake for dessert...

...and we let the kiddos choose the movie...and we watched Disney's version of A Christmas Carol...and y'all already know that A Christmas Carol is my all time favorite Christmas movie...and ranks right up there with my favorite movie of all time...

...Christmas Cards 2018...

...I got the stamps at the post office today...and then got out the address book when I got home...I love the day all the cards arrive in the mail...and addressing all the envelopes...do you?

...W.I.A.Y. ...

...for breakfast...I had a slice of whole wheat toast with peanut butter and a slightly over-ripe banana...it was still yummy...and tea...but you can pretty much assume I had tea with every meal...
...for lunch....I had a salad with pears and walnuts...no dressing...I just love fruit with lettuce...
...and vegan Chick'un and dumplings...
...over some delicious 2 ingredient (vegan yogurt and S/R flour) biscuits...
...I love a nice crusty biscuit...do you...or do you prefer them soft...?
...for dinner I made Nanny's sweet potatoes...
...and I rehydrated some ham TVP...
..to make Tofu Cordon Bleu...I made a slit in some baked tofu slices...
...and then stuffed the pocket with Daiya...
...and the ham tvp...
...and put it back in the oven to bake until the cheeze melted and it was heated through...
...it was delicious...other sides were peas, macaroni, and corn...
...so delicious...and easy...I'll definitely make it again...
...and German Chocolate cake for dessert...

...W.I.P. Wednesday...

...another non-knitting W.I.P. ...
...then Man had ordered this candle from Amazon...because he loves the piney scent of the Christmas season...
...but sadly...this is what we found when we opened the box...

...now...of course... we could have sent it back...but that's a lot of waste...so I decided to "fix" it instead...
...while I was out shopping Saturday...I stopped into a little antique store that I've visited before...specifically to find some sort of candle holder for this now pile of scented wax...

...and I found this spice jar...
...for 59¢...
...so...when I got home...I simply dumped the lump of wax out of the old broken holder into the new one...being careful not to get any shards of glass mixed in...
...turned the stove to 'melt'...
...and set the new jar into a pan of water...
...notice that the wick stayed there attached to the unbroken bottom of the jar...it has a little bit of sticky-tacky on it...so I saved that too...
...but now...as the wax melted...it doesn't quite fill up the new jar which is a little bit bigger...so I got out some emergency candles...
...and stuck them in the jar to melt along with the scented wax...
...they melted and mixed right in with the scented wax...
...then I pulled out the wicks...
...all melted...
...I set the old wick from the broken jar into the new one...and pressed it onto the bottom with a skewer......and made a little paper brace to hold it upright while the wax cooled...
...and then just set it aside to cool...
...and now the whole house smells like Christmas and we have a somewhat larger balsam scented candle for Christmas...

...we made Vegan Soup au Pistou...

...Over the Weekend...

...ok...it was a busy one...
...so...let's start with Saturday...it was rainy cold and windy...some of our red ribbons blew off so we had to secure those...
...I did the regular weekly shopping...and the only thing of note was that they had Halos...they were Cuties in North Dakota...still only available around Christmas-time though..
...I did a little bit more downsizing and packed up the Man's Bunn coffee maker...because he rarely drinks coffee anymore...I know...shocker!...
...then I made some rye bread...and the recipe said that it tends NOT to rise well...and does better making a tall loaf if it's 'confined'...
...so I set about making a 'confined space for it to rise in...with some parchment paper and washed out tin cans...
...and left it to rise in it's cradle...
...while we went over to the Church for some fun decorating...
...the Chrismon ornaments were brought out of storage...
...lights and garlands were strung...
...we laid the Chrismons out so they would be easily accessible when it came time to put them on the tree...they are so pretty...
...ladders and lights...
...then the ornaments...Many Hands really do Make Light Work...
...all the kids had made the bottom of the tree sort of ornament heavy...so there was some rearranging...
...when we got home I baked the rye bread...
...and then...because Scout commented that I only make corn pudding at Christmas...
...I made some Corn Pudding...
...it turned out perfectly...
...I guess technically this still counts as only making it at Christmas...
...Sunday was a little bit less busy...HA!...we had the annual Church Christmas Party/Dinner...
...and when we got home...we made some sauerkraut...when our half-gallon jar gets about half empty we make another batch..
...5 lbs of cabbage...and 5 tsp of kosher salt...
...packed into a half-gallon jar...with the special fermentation lid that only allows air to flow out of the jar...then we just leave it on the counter for a few weeks...
...and then finally we spent a hectic and frustrating and very tiring 5 hours putting this Air Force decal on the back of the truck...I'm pretty pleased with the way it turned out though...and I'll get a better photo of it in the daytime...
