...Engaged...

...it's official...

...Scout and Our Girl are engaged...

...it will be a fairly long engagement...no dates have been set...but I'll be sure to let you know the plans as they develop...

...the ring is Scout's own design...and he ordered the Opal from Ethiopia and had the ring custom made...and thankfully he was well pleased with the result...

...W.I.A.Y. ...

...breakfast was an 'everything' bagel...really a plain bagel with some homemade probiotic cream cheese with sesame seed, poppy seed, granulated garlic and onion salt sprinkled on top...
...lunch was one of my 'bowls' again...or a couple of them...

...lettuce with fruit (pears and orange), California mixed veg, sweet potato, tomatoes and cucubers, and fresh spinach...all with lemon juice drizzled over...
...the weather turned off perfectly...after several days of being very chilly...so the Man grilled some tofu...
...snacks were this large and filling bowl of leftover daiya alfredo style mixed with some mixed veg...and a Jazz apple...Scout had tried one on his break at work and brought one home for me...so good...

...I finished up sweet little Isabella's baby blanket...
...added a little One hour baby hat...a card... a book and a reusable tote as a gift bag...

...Tuesdays with Julia...

...we made some little appetizer sammies with a vegan version of Julia's Beurre de Moutarde...
...basically just vegan butter and Dijon mustard...and some parsley...
...spread on white bread...added some vegan ham seitan...
...and cut it into cute little triangles...

...these were really good...I remember when I was in France...they used butter on sandwiches like we would use mayonnaise...

...Over the Weekend...

...while I was doing some Food-Prep-Friday things in the oven...I mixed up some buffalo batter for some vegan cauliflower 'wings'...
...and popped those in the oven with some other things that you've seen before...and one you haven't...a delicious vegan cheesecake...I'll share that in just a sec...
...whipped up some vegan ranch dressing...
...and served...
...they were perfect...crispy and delicious...with a bit of heat...
...then...I was wanting some vegan cheesecake...so I gathered some ingredients...
...made a graham cracker crust...
...and pressed it into a springform pan...
...mixed up my vegan cream cheese...which is just my probiotic soy yogurt drained until it's the consistency of cream cheese...with a little bit of salt added...with the other ingredients...
...it baked up perfectly...
...served with some cherry pie filling on top...
...the best vegan cheesecake I've ever made...not too sweet...perfect...
...my scribbled recipe...pretty simple...

...OK fam...do y'all remember Daddy calling Keith cheesecake?...remember why?

...Dinner and a Movie...

...so this was my dinner...a salad and vegan ranch with tofu...and an Asian sweet potato...I love those purple potatoes so much...
...and then a big bowl of popcorn with the movie...

...which was the Man's choice this time...and surprisingly he chose a series...Maigret...and also Maureen had suggested this when I had shingles a few weeks ago...it was so odd to see Rowan Atkinson in a serious role...it was good...this one was set in 1950s Paris and about a serial killer...not too gruesome...

...W.I.A.Y. ...

...I started the morning with a Blackberry smoothie...these blackberries were not as good and sweet as these ones...so they got turned into a smoothie...it was good though...
...a little bit later I had a bowl of homemade soy yogurt...with some acai powder stirred in and some seeds sprinkled on top with a few Golden Berries...
...for Lunch I made a most delicious Chickpea B.L.T. salad...
...it was so delicious...I'm definitely making it again soon...
...sometime in the afternoon I had some tea and some strawberries...
...and some grapes...
...Dinner was a Lenten meal at the Church...so I made Chick'un and Dumplings...

...W.I.P. Wednesday...

...I'm 3/4 of the way finished with a sweet little baby blanket...pink with a cream and green stripe...it kind of has a retro vibe...for a sweet little baby named Isabella...

...I'm kind of in a rush too...because Isabella was born last week...yikes...

...I'm going to do the same chain stitch border that Our Girl did on her blanket...and I hope to get it finished by the weekend...and I want to do a little one hour baby hat too...

...Tuesdays with Julia...

...we had Vegan Sauce Robert over our tofu...
...it was good...all of the particulars are over at The Vegan Version...

...and we had some yummy side dishes to go along with the sauce...
...I made our favorite Tunisian Bread...
...I had done a review of Daiya's Cheezy Mac...so now let's try the Alfredo Version...
...it's easy to make...you just cook the noodles...and squeeze the sauce packet over...
...and stir it all in...it's OK...I've definitely made better alfredo sauce...both from cashews...and from cauliflower...
...and then I made some Brussel's Sprouts...
...just sautéed in some vegan butter until lightly browned...
...and some Alfredo Cheezy Mac...

...Over the Weekend...

...we didn't do 'Dinner and a Movie' because we had dinner out with some dear friends who were visiting from West Virginia...
...and then for breakfast I made my regular muffin recipe...but added cranberries...
...chopped pecans...
...and bran flakes...
...and just stirred these ingredients in...
...and they made the most delicious muffins...
...and then for St. Patrick's Day...we made Irish Soda Bread...
...made the traditional cross in the center...
...and made a delicious Vegan Corned Beef...
...served with Grandma's Mashed...and fried cabbage...
...it was delicious...
...and the bread cooked up fluffy and light...
...into a delicious whole wheat biscuit...

...we had such a nice visit with our friends...and celebrating St. Patrick's Day...
