...W.I.P. Wednesday...

...our carbon monoxide detector needed a battery...and of course it's some ridiculous size that no one keeps...and since you can't really put up with that beeping...you have to go out right away and buy one of the silly little batteries...

...all of that to explain what I was doing at Stuff-Mart...(looking for a battery...that they also did not have...I finally went to a specialty battery and bulb store and they had one)...
...and it being the end of summer and all...Stuff-Mart has all their summer things on clearance...

...so...I got this weird dress/cover up thingy...at least I think that's what you'd use it for...I really can't imagine where you would wear it...because it definitely needs a lining...
...so on the same clearance rack...they had a plethora of these skimpy tops...for a quarter...25¢ ...they were approximately the right colour...so...I bought three...
...and I cut them off...
...you know where I'm going with this...I'm going to sew them together into a tube...and use it to line the skirt...

...and maybe I'll find some use for the bralette thingy too...
...so this is the skirt detached from it's bra thingy...you can't see it very well here...but it's very sheer...
...maybe ok for a beach cover up...
...ta-daaa...one fully lined skirt...total cost $3...time invested...about 15 minutes...
...and I actually wore it to Church Sunday...

...Tuesdays with Julia...

...it seems like it's been a long time since I've cooked with Julia...so I made two recipes...
...first another version of artichokes...as we probably won't see any fresh artichokes again until next spring...VEGAN ARTICHAUTS AU GRATIN
...and then a peppery sauce...Vegan Sauce Poivrade

...both were really good and all of the particulars are over at The Vegan Version...

...Over the Weekend...

...I made these delicious chewy oatmeal granola apple bars...
...they were super easy to make...
...and they made the house smell delicious...
...I sliced them up into bars...
...and I'm keeping them (while they last) in a pyrex dish...
...these bars are so delicious and so handy to have around...they make a perfect quick on the go breakfast...

...it was already vegan...and the only thing I did differently was to leave out the nutmeg...not a fan of nutmeg...

APPLE PIE OATMEAL BARS:

1.5 cups rolled oats
2 cups oat flour
1.5 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp baking soda
pinch of salt
3/4 cup apple sauce
1/2 cup maple syrup
1.5 tsp blackstrap molasses
2 medium apples sliced

- MIX all ingredients except apples in a large mixing bowl. Press out half the mixture in a lined 8x8 baking pan. Add the sliced apples and gently press them into the oat layer. Then add the rest of the oat mixture on top. Sprinkle with extra oats and cinnamon.

- BAKE at 325F for 30 minutes.

...Dinner and a Movie...

...nothing too interesting...
...although I did eat an entire half of a watermelon for dessert...and boy was I stuffed...
...the Man's pick for the movie and he chose a Nixon documentary...Our Nixon...it was probably payback for Me before You...haha...

...JK...it was really good...and the funny thing is...that having lived through the Nixon era as a child...I just kind of had this vague idea of what was really going on...and it's definitely beneficial for me to revisit this part of our nation's history...

...I've started calling her floppy little kitten...

...seriously...I've got to take a video of her coming into a room and flopping down like this...she's like one of those fainting goats...

...and then she'll just go to sleep...wherever she flops down...

...W.I.A.Y. ...

...I had made a batch of Bryanna's Lowfat Granola...so I had that for breakfast...
Breakfast - Granola with Homemade Almond Milk
...and then I'd been craving sushi...so I got everything together for that...the Man hates sushi...
...but I love it...this is the first time I've tried the powdered wasabi...and boy is it ever strong...

Lunch - Vegan Sushi
Snack - Gala Apple and Pecans...
Dinner - Linguine tossed with steamed broccoli, olive oil and red pepper flakes...simple and yummy...
...and one more snack...this one is actually a favorite breakfast of mine (and my Daddy's)...and taking a queue from the Man who often has cereal as a late night snack...

Snack - Cheerio (style) cereal with banana and almond milk...

..your turn to inspire me with what you ate yesterday...

...Garden Haul...maybe the last one this year...

...our 'gardener' told us that this would probably be the last of the tomatoes this year...and the last of the fresh corn...
...and those tomatoes...seriously...bigger than my hand...
...and the first onions...what I consider a 'fall' crop...and it is definitely cooling off...and the trees are changing colour to that...you know...darker/duller green before they actually change to fall colours...

...over the weekend...

...the forecast for Irma changed and she was supposed to skirt by us to the west...and that's exactly what she did...we only had bunch of wind and rain...whew!
...our freezer was leaking into the refrigerator...so I googled how to fix that...it was pretty easy...a screw driver, blow dryer, baster and a pipe cleaner were all that were needed...

...you can barely see it in the photo...but we had quite the little ice dam there on the floor of the freezer...and the ice was blocking the drain hole...

...this had nothing to do with the storm...it's just something that needed to be done...
...the Man went ahead and wired up the circuit breaker panel with a plug that we can plug the generator directly into so that it can power the whole house...

...so that was storm related although not entirely necessary...
...and I made another batch of dried kale chips...basically I buy a bunch (or two) of kale each week...still only 89¢ a bunch...and then I remove the ribs (and save those for smoothies and such)...and smoosh the kale up with some spices...one mixture I like a lot is documented here...but this batch just has Trader Joe's chili lime and nooch...and that's really good too...and you don't have to have a dehydrator....you can make these in a regular oven too...

...Vegan Cheesecake....and a movie...

...nothing spectacular on the dinner menu...I sliced up some colourful peppers...
...and grilled them in these neat little basket thingys...you get all the benefits of char-grill without the hassle...

...and we're really trying to soak up all these last days of summer...and the weather has been absolutely gorgeous...showing no sign at all of the looming hurricane...it makes you wonder what people did 100 years ago when a hurricane was coming...I guess they just didn't know...
...served with tofu (of course)...broccoli soup...rice and a salad...
...now...starts the spectacular part...

...I made a delicious VEGAN Cheesecake...I started with some vegan graham crackers and Earth Balance...just blended up in the food processor to a fairly fine crumb...and I used our wooden sauerkraut/cabbage/plunger/packer thingy to pack it into the springform pan...
...perfectly smooth...
...gathered some vegan ingredients...
...blended them all up...and poured them on top of the crust...
...ready for the oven...
...baked at 350° F for about 45 minutes...
...ran a knife around the edge...
...and removed the pan...the cheesecake edge/crust is perfect...
...and the center is creamy and delicious...

Spectacular Vegan Baked New York Style Cheesecake

1 cup Vegan yogurt - I used my vegan probiotic yogurt...
2/3 cup cashews...you'll probably want to soak them if you don't have a Vitamix or a strong blender...the filling needs to be perfectly smooth and creamy...that said...I didn't soak mine...so I added 1/3 cup water...
1 tsp vanilla
2 Tbls Corn Starch
2 Tbls Sugar
2 Tbls Agave - that's Maple Syrup in the photo...but I thought better of it when I smelled the open syrup and went with the more neutral Agave...but feel free to use Maple Syrup if you want...
1/4 tsp salt

Method:
...just blend everything up and pour into a prepared crust of your choice...

...so that was delicious...

...and the movie...well...it was my turn and I chose Me Before You...a real tear-jerker...with a bittersweet ending...which I kind of enjoyed... ...parts of it were funny...and touching and sweet...and parts of it weren't...so...like life...it's really just a story about some people...the Man was not a fan...

...so...the Man's turn next week...but give me some ideas for the next time it's my turn please...
