...Over the Weekend...

...I made these delicious chewy oatmeal granola apple bars...
...they were super easy to make...
...and they made the house smell delicious...
...I sliced them up into bars...
...and I'm keeping them (while they last) in a pyrex dish...
...these bars are so delicious and so handy to have around...they make a perfect quick on the go breakfast...

...it was already vegan...and the only thing I did differently was to leave out the nutmeg...not a fan of nutmeg...

APPLE PIE OATMEAL BARS:

1.5 cups rolled oats
2 cups oat flour
1.5 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp baking soda
pinch of salt
3/4 cup apple sauce
1/2 cup maple syrup
1.5 tsp blackstrap molasses
2 medium apples sliced

- MIX all ingredients except apples in a large mixing bowl. Press out half the mixture in a lined 8x8 baking pan. Add the sliced apples and gently press them into the oat layer. Then add the rest of the oat mixture on top. Sprinkle with extra oats and cinnamon.

- BAKE at 325F for 30 minutes.
