...4.30...What I Ate in a Day...as a Vegan...

...time for another day of vegan eats...
...supplements and OJ...real orange juice this time from our big shopping the other day...
...and then I took a container of silken tofu and split it in two...and made half into vegan strawberry yogurt...just adding 2 teaspoons each of sauerkraut juice (weird I know - but it works here), lemon juice and apple cider vinegar...a dash of salt...and some frozen strawberries...and that's what I had for breakfast...
...and then I took the other half and added some Droste cocoa and sugar...that's it...oh and a dash of salt there too...
...and I just put that into a container for later...
...it makes the most perfect chocolate pudding/pie filling...
...and then I wanted avocado sushi for lunch...so I got some avocado out of the freezer...

...now we're still good on rice for a while...and the Man abhors sushi...so I made him his own pot of regular white rice...but I thought I'd use up some bits and bobs of other rice for my sushi...
...so I mixed up brown, jasmine, and black rice...and cooked it all together...not really sushi rice I know...
...and I got out my sushi making implements...
...the rice wound up being kind of purplish...but I sprinkled it with vinegar and it worked fine...
...I lined my bamboo mat with a re-used veg bag from the grocery haul last week...
...and rolled up one log...
...and then another one...
...and mixed up some wasabi powder...
...topped each round with some pickled ginger and wasabi...and I had a perfect lunch...
...for a snack...I had some cut up broccoli stems and hummus...I'm on my third quart of hummus and the last bag of broccoli...
...then for dinner...I finished off the Man's pot of rice from lunch...just adding some Earth Balance to a bowl of salted rice...so yummy...
...steamed some broccoli...
...and then with the rest of the rice ...I made a bed for some steamed broccoli and baked tofu...and poured over some General Tso's sauce that Our Airman left in the fridge...barely still in date...

...still thankful that we have plenty of food...I know that's not the case for everyone...

...4.29...W.I.P. Wednesday...

...well...I used up almost all of my white thread making masks...I really could use other colours of course...but I went ahead and ordered a super-sized spool of white...

...I remember Mom sewing with big spools like this when I was little...I'll have to rig up something to make it work with my machine...or else spin it off onto bobbins...
...so...I thought it would be a good time to do some mending...is it just me...and I'm really hard on unders...or does everyone have this problem...the elastic separates from the panty at the waistline...I don't think I tug on them too much...but I seem to have the same issue with every package...
...Our Airman left behind several white t-shirts...I think they wear tan ones...and I use them in the winter as undershirts...and wear them as an extra layer under my pajamas too...they're just a nice soft cotton for that purpose...but all three of them have sprouted holes under the arms...
...so I just stitched them closed...
....there's a slight pucker there...but it won't be noticeable to anyone...
...and I just patched the unders with some zig-zag...we'll see if it holds...

...in knitting news...I've cast on for the Sonora Cacti Socks...they look like a fun knit...and I'm using the leftover navy blue cotton...and the green and the red are just from stash...
...it's not a difficult pattern...just a simple repeating chart for the cacti...but it has an afterthought heel that I've never done before so that should be interesting...
...and all that stranding makes for a pretty thick sock...so I'll be looking for another solution when I get to the sole...because I'll be doing a princess sole...of course...and that would put the stranding on the outside...just something to think about...

...2.27...Over the Weekend...

...first of all...I thought it was time for a critter update...they are all non-plussed by the current global situation...
...Callie napping on the steps...but she will spend a happy hour or so sitting in my lap on the porch...purring her happy little whisper purr and kneading her paws on my tummy...she's a sweetie for sure...
...Jack will turn 15 this summer...and still makes himself right at home on the sofa...
...kitten sleeps in the strangest positions and in the strangest places...
...Jack sleeping on his bed...with his tongue out like a puppy...
...now a plant update...this is the shamrock plant that one of our sweet parishioners gave me our first year here...so it's 5 years old now...and it blooms every year...she has passed away now...so it's sweet that I have the plant...
...and the foxglove that Mom gave me last year is blooming...
...it's really pretty...
...it's just about time to make some more Bee Free Honee...so this time instead of chamomile tea to give the honee that pollen-y taste I collected some clover flowers from the yard...and just hung them up to dry in the kitchen window...I'll let you know how that turns out when I make the Honee...
...on the food front...I cooked the huge bunch of collards that I got in my pick-up groceries...so nice to have that...really nice to have any veg in addition to broccoli...haha...
...and remember all those potatoes...I made some baked home fries/hash browns for breakfast...with some onion and tofu...
...still trying to eat at least one potato apiece each day...
...and finally...on the home front...we pulled all the appliances out and cleaned around and behind them...it's always so gross...and so satisfying when it's all clean and back in place...

...4.24...Dinner and a Movie...

...dinner was nothing special...some marinara from the freezer with some frozen spinach thrown in...and some homemade bread...

...now that we've finished the Watership Down series...Éphée from L'éphémère quotidienneté des repas et autres trucs de magie suggested Unorthodox...another Netflix limited series...and so far it's fascinating...such a look into a somewhat secret and unknown world...for me anyway...

...and I already fast forwarded to the end of the last episode...just so I wouldn't be in suspense about it...and can calmly watch the other episodes with the Man...haha...I didn't have to do that with Watership Down...because I'd already read the book...and I'm pretty sure that when I read it the first time in Jr. High I read the ending first...

...what have you been watching lately?...and like Éphée...I recommend Unorthodox...

...4.24...Friday Favorites...Pumpkin Pie...

...remember last October...when I froze that huge Candy Roaster that my sweet brother and sister-in-law gave me...
...well...I'm so glad I froze it in muffin cups...6 of those are the perfect amount for a pumpkin pie...
...I just thaw it and let it drain...until it's the consistency of the canned pumpkin that the recipe calls for...it's Bryanna's recipe...
...so I made a crust...
...and baked that...along with some little hearts I cut out of the dough I had leftover...
...then I just mixed everything up...using the protein milk we got from Amazon for the milk...
...poured it into the crust...
...and added my little pie crust shields so it doesn't get too brown...
...it didn't crack too badly...
...it's so pretty and it smells wonderful...I added the little hearts...
...and waited impatiently for it to chill...
...it's always delicious...

...do you like pumpkin pie?...it's my favorite pie...well maybe the coconut one from last week is my favorite...or maybe it's a tie...
