...Vegan Chocolate Cookie Dough...

...this is my new favorite snack...
...take some oats...about a cup
...and some great northern beans...these were cooked plain...in the Insta-pot...about 2 cups...
...a couple of tablespoons of cocoa...
...take about 4 Medjool dates...and remove the pits...
...soak them in boiling water...and add them to the food processor...
...process until smooth...
...put it in a bowl...
...and chop up some dark chocolate...
...and sprinkle that on top...this is seriously so so delicious...
...I put the leftover 'dough' in a jar...
...and store it in the fridge...
...and then I usually just eat it right out of the jar by the spoonful...

...W.I.A.Y. ...

...I threw a bunch of fruit and some spinach stems in the Vitamix...
...mango, spinach, peach, and pear...gave it a whirl...
...and I had two quarts of delicious mango/peach smoothie for breakfast...I only drank one jar and put the other in the fridge...it was yummy...
...and as almost always happens when I just have a smoothie for breakfast...but mid-morning I was hungry...so I toasted some leftover Tunisian Bread...and ate a handful of grapes...
...then for lunch I had a very delicious avocado sandwich...it was so good...like fancy restaurant $12 sandwich good...and it was rally simple ingredients too...tofu, vidalia onion, homemade vegan mayo (recipe in this post), romaine lettuce, and whole wheat toast...
...and mid-afternoon when I got hungry...I threw some frozen broccoli stems in the George Forman grill...
...and just ate those out of hand...
...remember Tuesday's sauce that I made with Julia...and I said I thought it would make a good stroganoff...I just added some vegan sour cream and tofu...
...and I was right...it makes a delicious rich stroganoff...and we had Brussels sprouts, green beans and a salad with that...

...W.I.P. Wednesday...

...so...
...I finished the little car seat blanket like the Grandma's Favorite Dishcloth...it's pretty square...a little bit wonky...

...I just started with 2 stitches and increased until I had 100 stitches and then started down the other side...
...right at the tip...I ran out of yarn...so...remembering the little hat I'd made in the same pink yarn...I unraveled it to get enough of the pink yarn to finish the blanket...thinking I could just make another little hat pretty quickly...but I wound up with the crown intact and just a little bit for a single stripe around the brim...
...so I put a white/taupe border around the little blankie...and Kitten loved it...if you put knitting in the floor or on the bed...she is on it immediately...it's really funny...she doesn't hurt it...she just immediately flops down on it...like she's taking ownership...
...and then re-crocheted the hat in white...and added a taupe stripe and the final bit of pink in the brim...

...don't-ya-just-love that word...re-crochet...haha...
...I think it still turned out super cute for a little girl...
...and added a little reusable tote (as pink as I could find it)...

...we made another one of Julia's brown sauces....
...I think this mushroom based sauce would be really good with some vegan sour cream stirred into it and served with noodles like a stroganoff...

...Over the Weekend...

...first of all...there was no dinner and a movie Friday night because we had a wedding rehearsal and groom's dinner...

...I always try and put people right at ease if they seem worried about not having any vegan food for me...because being vegan is really easy...and I would have been fine with bread and tea...haha...but they actually had lots of vegan food...I asked about the green beans and they were only seasoned with olive oil and spices (which is kindof unusual around here where they usually put some sort of meat or animal fat in them), I also had a plain baked potato with salt and pepper, a huge salad with Italian dressing, and 2 dinner rolls...and sweet tea...so I was rather well fed...and no one had to go to any trouble at all...

...then Saturday there was a beautiful wedding and then a reception...where they had a salsa bar...so again...I was well fed...
...so it seemed like a busy and quick weekend...and the only other thing of note was that the Man and I went out for a late lunch after Church...

...to a little restaurant that's called "Breakfast Time"...but I got a veggie sandwich and fries...it was really yummy...
...oh...there was one other thing...I made Macaroni and Cheeze for dinner...and I found out that it really does matter what type of pasta you use...

...when we were cooking dinner...we had already decided to make vegan mac and cheeze...but when I looked in the cupboard there were no macaroni noodles...but we had a half of a box of ditalini left over from when the Man made that delicious minestrone...and I said that we could use that because it wouldn't make any difference...but it did...

...the mac and cheeze was just a little bit odd...what do you think?...is a noodle a noodle?...or does it matter what shape it's in?...

...Another Hurricane...Michael this time...

...people had hardly caught their breath from Florence...
...and yesterday hurricane Michael blew up the coast and through our neighborhood...

...no real damage here...a lot of branches down...and one huge tree over at the Church was split and broken...I'm sure it will have to be cut down as it can't possibly survive...

...and we were without power most of the day...
...and finally as it started to get dark...after the storm was over really...we set up the generator so we could cook some dinner and turn the fridge and freezer back on...

...and then right as it got dark the power came back on...so we needn't have bothered with the generator...oh well...but we still have neighbors without power...

...hoping hurricane Michael left you alone...

...W.I.P. Wednesday...

...I got sidetracked from my other projects...
...there will be a new baby girl in our Parish by the end of the month...so I made the little Baby Beanie in Blue...except in pink...of course...

...I've made it before...here...it's so quick and easy...and it turns out so cute...

...and I'm working on a little car seat blanket...also in pink...I'm just trying to make it on the diagonal...like the Grandma's Favorite Dishcloth...except in stockinette stitch...we'll see...it may not work...

...Over the Weekend...

...first of all...we fixed the oven...so there will definitely be a Tuesdays with Julia post tomorrow...
...and then I'd been perusing the Engine 2 Blog over the course of the week...and had found not one...not two...but THREE recipes I wanted to try over the weekend...so we got started with the one for the breakfast casserole...called Sunrise Breakfast Bake...

...it calls for Rotel tomatoes and peppers ...but I didn't have any...so I improvised with jalapenos and diced tomatoes...
...that looks about right...
...added the nooch and spices...
...4 cups of broth...
...and some kale...
...and then the oats...yes...oats...are the binder and chewy eggy goodness of this bake...
...ready for the oven...
...then when it was half-baked...
...I used my Mouli grater to grind up some whole wheat toast over the top for bread crumbs...
...and then popped it back in the oven...until the top was nicely browned...
...and breakfast was served...
...but it was almost noon...so really this was brunch...
...it turned out perfectly...
...just the right amount of spicy and it was delicious...
...my bunch of kale was so huge...and I had another Engine 2 recipe I wanted to try...
...so I cut up some sweet potatoes...because you only need 5 ingredients for this curry...
...and then we had the Sweet Potato Curry in a Hurry for dinner...
...and it really was ready in a hurry in the Instant Pot...so quick and easy and delicious...
...and then finally for dessert...we had the delicious Adoonis Cake...
...it baked up so perfectly...
...the only change was that I added a couple more tablespoons of cocoa...because we love chocolate...
...and the icing...is basically my tofu mousse that I use as a pie filling...
...so surprising that it works so well as an icing...
...really...really delicious...

...so...I highly recommend all three of these recipes...and I can't wait to try more...
