...2.17...What I Ate in a Day...as a Vegan...

...for breakfast...I got out some mango and peaches from the freezer...and the soy yogurt that I'd made over the weekend...
...just a small handful of each fruit...thawed and roughly chopped...
...added in a half cup or so of yogurt...so delicious...(haha...I know that's the name of a vegan yogurt)...
...then I also had a bowl of bran flakes with homemade soy milk...I was pretty full and didn't have any snacks before lunch...
...so for lunch I made a really big salad...what I call a 'fancy' salad...because I added fruit and nuts...and beets...and raspberry vinaigrette....
...and then with my 'fancy' salad...I had a pretty plain assortment of leftovers...some pinto beans with relish...and a slice of toasted homemade bread half with Chao cheddar melted on top and half plain...
...then for supper...the Man had gotten these chiles...he and Our Airman had tried a lot of dishes in New Mexico that contained Hatch Chiles...they were omnipresent there...haha...Hatch chile is a label for New Mexico chile grown in the Hatch Valley...
...and they were too hot for me...but the Man said they have a really good flavor...and he put a small amount into the TVP chili he made for dinner...it was good...but it made my nose runny...I think in future he'll just have to top his chili with them if he wants...haha...
...I made some vegan cornbread in the biscuit pan Mom gave me...and froze the leftovers...you know...as hockey pucks...
...and we had some collard greens cooked in the InstaPot as well...
...I think the only snack I ate all day was an apple and some walnuts...

...but I also snacked on some tortilla chips and salsa while we were cooking dinner...but I didn't take a photo...

  1. We have been on a bit of a beet kick lately, plain beets and pickled beets, they are so nice in a salad and so good for you.

    I think I am going to have some raw veggies with a bit of natural peanut butter as dip for my lunch today as I am, weather permitting, going to dinner with my book club this evening. We are supposed to get freezing rain, sleet, and then 3 to 5 inches of snow starting around two pm today, we are going to make the call on book club at 4pm LOL. We can reschedule our dinner out for next week. I am looking forward to visiting the restaurant as they cater to vegans, it is Asian fusion and they have a lot of tofu options so I am pretty excited about that.

  2. Let's see. Oatmeal with a granola bar crushed on top for breakfast, some pasta salad for lunch and leftover cornbread and jambalaya for dinner. I'm pretty sure I snacked on some mixed nuts in there somewhere but can't really remember.

      ...you know the Man eats oatmeal every single day...I only have it rarely/occasionally...and then it's usually raw...

  3. Everything looks tasty. I love fruits and yogurt but your fancy salad looks yummy too! I'm with you on the hot sauce. It makes my nose water.

  4. I switched out cow's milk in my oatmeal to soy milk, so far so good. For lunch I had a tossed salad with chick peas (vegan) and then for dinner my husband made a curry that had soy yogurt in it but there was chicken and it was ultra delicious!

      ...I use various plant based milks for different things...in coffee and tea...I prefer cashew...for almost all cooking I use unsweetened almond milk...and for yogurt I always use soy as it has the best protein content and makes the best textured yogurt...
