Special Dessert

For a special treat last night after supper I made a hot fudge pudding cake that my MIL used to make when the Man was little. I hadn't made it in forever - it's easily veganized and kind of weird putting it together - you don't think it's going to turn out the way it does...

Hot Fudge Cake

1 c flour
3/4 c sugar
2 Tbsp cocoa
2 tsp baking powder
1/4 tsp salt

Mix these together in a bowl.

Then add:

1/2 c soy milk
2 Tbsp melted vegan margarine

Pour this into an ungreased 9X9 pan.

Then sprinkle over the top:

1 c. packed brown sugar mixed with
1/4 c cocoa

Then pour over the top of the mix.
1 3/4 c. hot water

Bake at 350 for 45 minutes.

These are the separate mixes.

This is the cocoa and brown sugar sprinkled on top of the cake batter.

Then you pour on the hot water and it just looks messy...

But pop it in the oven and the cake part rises above the liquid and starts to brown...

...and it looks like a yummy fudgy brownie when it comes out...

...serve it warm (of course) - maybe with some vanilla soy ice cream...

PS - this reheats well too - just pop it in the micro and top it with some soy ice cream...

  4. Sound like Karen is getting ready to make it soon or maybe just making sure recipe is complete. It does look tasty and fun. I'll have to wait, too. F and I need to diet, too. E
