...Vegan Vanishing Oatmeal Cookies...

...these are the Man's favorite cookies...
...so I usually try to keep some in the cookie jar...
...the original recipe is on the lid of the Old Fashioned Quaker Oats box...easily veganized...
...Earth Balance...
...sugar brown (turbinado) and white (organic beet sugar)...
...frothy EnerG egg replacer...
...mixed with flax seed goo...for the eggs...
...mix until creamed together...
...I like to use a wooden spoon for mixing cookies...
...add the dry ingredients - flour - soda - cinnamon and salt...
...mix that all in...
...then add the oats...
...and stir those in well...
...some raisins...we all think a cup is too much...so a little bit less than that...we really only want about one raisin per bite...
...I use a small scoop to make fairly uniform sized cookies and I always use parchment paper for cookies...
...bake until golden...
...cool completely...
...and enjoy...the recipe really does make about 4 dozen cookies...a lot...

Vegan Vanishing Oatmeal Cookies

½ cup plus 6 Tbsp Earth Balance – softened
¾ cup firmly packed brown sugar – I used turbinado
½ cup granulated sugar – I used beet sugar
EnerG eggs equivalent to 2 eggs – for the liquid in mine I use flax seed goo
1 tsp vanilla
1 ½ cups all purpose flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
3 cups old fashioned oats
1 cup raisins

1. Heat oven to 350 ° F - (177 ° C). In a large boawl, beat Earth Balance and sugars until creamy.
2. Add egg replace and vanilla; beat well…
3. Add flour, baking soda, cinnamon and salt; mix well.
4. Add oats and raisins; mix well.
5. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
6. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered. Makes about 4 dozen cookies.

  1. When I saw your title, I thought you were going to say that you called them vanishing because your family ate them all! They look delicious!

  2. Oatmeal cookies are my favorite and after I finish my juice fast I will have to give this a try, yum!
