...Vegan Peanut Brittle...

...my chef brother gave me this recipe...years and years ago...like early 90s I think...I can remember making it at the house in Balsam Grove...

...Scout loves Peanut Brittle...and I probably don't make it often enough for him...
...just gather a few simple ingredients...
...this recipe goes pretty quickly so I like to have everything measured out ahead of time...
...microwave the sugar and syrup...
...add the peanuts...
...microwave again...add the Earth Balance and vanilla...and stir...
...then add the baking soda and stir quickly...it foams up a bit...
...spread it on your prepared baking sheet...
...and let it cool and harden...
...and break it into pieces...
...we store ours in a pyrex bowl...now in the wintertime when the air is relatively dry...it's probably not that crucial...but in the summer when it's humid...it will quickly become a solid stuck together mass if it's not stored in an airtight container...

Easy Vegan Peanut Brittle

Ingredients

1 cup sugar
1/2 cup light corn syrup
1-1/2 cups Dry Roasted Peanuts
1 Tbsp. Earth Balance
1 tsp. vanilla
1 tsp. baking soda

Directions

1. Microwave sugar and corn syrup in large microwaveable bowl on HIGH 5 min., stirring after 3 min. Stir in peanuts. Microwave an additional 3 to 5 min. or until golden brown.

2. Add butter and vanilla; stir until Earth Balance is completely melted. Microwave 1 min. Stir in baking soda. (Mixture will foam.)

3. Spread mixture onto lightly greased baking sheet. Cool completely. Break into pieces.

  3. Are you sure that recipe calls for "microwaving". Don't think your brother does it that way. HAHA
