...Over the weekend...

...after I got over my little bout of stomach trouble...I got up Saturday feeling so much better and so I got busy...you know the regular chores...just regular cleaning...laundry and such...

...Scout was working a the Food Lion where I shop for groceries...(or rather...I guess I should say that I go out of my way to shop at the store where Scout works)...so I asked him before he left for work in the morning what time he would be on break...and I planned on taking him to lunch at the Subway right next door during his 1/2 hour break...and he said that would probably be at 1:30...
...and since I had a little bit of time to kill I stopped at the dollar store to get some of those peel off hooks for a little project...

...and as so often happens I find something else...

...this little travel dressing bottle...perfect for popping a serving of vegan salad dressing into my purse...so now I can take my favorite Vegan Ranch along with me...which I'm more likely to put on a baked potato at a restaurant than a salad...I can usually get a vinaigrette at any restaurant...but it certainly gives me a lot more options...

...and then still waiting on 1:25-ish...I stopped at a little antique stored I'd never been in before...
...I'd had these three little matching pyrex bowls since we lived in North Dakota...not sure when I got the smaller one on top...also pyrex...but a different size...
...but I often used them like they were a set...
...and then I found one at this little antique shop...for 49¢
...so now I really do have a set of 4 little white pyrex bowls...
...and then I found this tea strainer for 79¢...and since I almost always use loose tea and since I make tea every single day...I figure it's worth it...haha...

...and I walked into Scout's store at 1:25 and texted him...and he said he had gone on break at 1...and had 3 minutes left...so that was a bummer...
...so I just did my shopping and came home...I got some more tomatoes and an avocado...they had the big farmer's market ones...so I got one...but I'm not holding out too much hope that it will be good...
...I also got tofu (firm and soft)...and these 'tamed' jalapeƱos...which we really love...jalapeƱos can be so fickle hot one time and mild the next...2 pears a few lemons and oranges...and a couple of Minneolas (a type of tangelo)...a cabbage (which I'm about to turn into sauerkraut)...collards (of course)...a butternut...radishes...some garbanzos...eggplant...strawberries...iceberg lettuce (for wedges)...and a big bag of bananas...
...which were 89¢...9 bananas...
...and grapes...which were not organic...so they get washed about 4 times...they were yummy though...
...I put the garbanzo/chickpeas in water to soak for the Instant Pot...
...I chopped up the cabbage...I weighed it first 3.5 lbs...that way I'd know how much salt to use...3.5 tsp...it's a pretty easy 2 ingredient recipe...
...when you massage in the salt...it shrinks quite a bit and makes a lot of salty water...
...packed it into a half gallon jar...and sucked all the air out with the little tool that came with the lid...
...then I had these apples languishing in the bowl...2 goldens...2 romes...and 4 granny smiths...
...so I peeled and cut them all up...
...and then just cooked it on low...without adding any single other thing...
...the best applesauce ever...I'm glad I have a blog because I'm going to want to remember this combination of apples for making applesauce in the future...
...the Man must have felt sorry for me missing my dinner Friday because he smoked some delicious tofu for me on the grill...
...so nice...
...and I cooked up the garbanzos in the Instant Pot...and packed those in jars...
...so that I could turn right around and make a batch of collards right away...so quick...

...and finally before bed...
...I made our favorite blueberry muffins for Sunday breakfast...it's always nice to have something ready as Sunday morning's can be pretty hectic around here...

...and that's about it...Church and rest on Sunday of course...

  2. You had a busy day cooking and baking. I always feel so much better when I've made stuff ahead though I can't do much of it as I have no where to store excess.

    Sorry it didn't work out for lunch with Scout.
