...Over the Weekend...

...I did the usual shopping...and got lots of bargains...they had melons 2 for $4...so I got one of each...
...and I scored 2 more 89¢ bags of bananas...and some beans for the Instant Pot...and some mushrooms for a Lauren Toyota recipe I want to try...
...I also got spinach, lettuce, kale and collards, different kinds of apples for applesauce, eggplant for hummus...
...and avocados and tomatoes...

...so that was a pretty successful trip...
...I cooked the greens in the Instant Pot...Have I mentioned before that the boys don't like the stems in their collards...so I just lay them on top and I eat them all like asparagus stems...they're so good...I can't believe they don't like them...
...but they get to enjoy all of the greens without the stems..
...I used this seasoning for the greens...they turned out delicious...so I'll be getting more of this...it must be a southern thing...I'd never seen it before...
...the Man changed the oil and air filter in his car...also frugal...
...I made some Vegan Vanilla Wafers...for...you guessed it...Banana Pudding...
...baked until crisp and golden...
...and I used some of the 'overripe' bananas...
...layered together in a casserole dish...
...did y'all know that the Cook & Serve variety of Vanilla Pudding is accidentally vegan...I just used almond milk...
...just poured over the wafers and bananas...
...for dinner Saturday...we had the Man's potato soup...cornbread...salad...I had grilled tofu...and the kiddos had a veggie burger mushroom soup concoction...
...it was so nice to have them home for the evening...
...and we had banana pudding for dessert...
...and that was a delicious ending...

  1. Looks like you got a good haul when you went shopping. Your pudding looks very delicious and I'm sure Scout and the girl really enjoyed dinner at your place.

  2. my goodness, i'm about breathless reading all that! i wondered why i'd seen the stems on top of the collard pot like that. good idea! i agree, the stems from collards and broccoli are the best. i'll have to look for that seasoning, i've never seen it before either. love, k

  3. I love collards and mine are coming to flower for the seeds. I don't cook them for long though.

  4. Bananas and custard was a big favourite back in the 50s and 60s, my children loved it. Vanilla pudding looks like custard so very similar.
