...Over the Weekend...

...this is rambling disjointed post for sure...
...I made another batch of croutons...
...the Man and I tried two of Annie's soups...tomato...
...it seems darker and saltier than Campbells...
...I had Ritz crackers in mine...of course...
...the Man tried the Hearty Corn...and he didn't like it...it's peppery and sweet...I added some black beans to it and ate the leftovers...
...in the afternoon...I got out my darning egg...
...because one of my favorite summer shirts has sprouted several small holes...
...I just stretched it over the egg...wrong side out...
...and carefully stitched them closed...
...this is the right side...
...and finished...there are some puckered places...but I'm going to wear it for sure...
...later in the afternoon...my new office chair arrived...

...I used to have my computer in a cabinet in the guest room...but I'm moving it into Scout's old bedroom...and I needed a proper chair...
...got out all the pieces and read the "constructions"...or instructions as the case may be...
...it was simple to put together and came with the only tool you needed...
...all done...
...then on Sunday - St. Patrick's Day...after Church...I made a vegan version of the Guinness Chocolate Bundt Cake...I adapted Foodtastic Mom's Recipe...

1 ¾ cups all-purpose flour
2 cups sugar - we used bone char free vegan sugar...
¾ cup dutch-process cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup full-fat buttermilk - we used vegan probiotic yogurt...
1 cup Guinness
½ cup vegetable oil
2 large eggs - we used EnerG Egg replacer...
1 teaspoon vanilla

...it turned out perfectly...moist and the texture was like gingerbread...I definitely recommend it...and it doesn't taste like Guinness...
...the Newlyweds were coming for dinner...so I folded some fancy napkins...using the book that Amy gave me for Christmas...
...vegan St. Patti's Day fare...
...remember back when I dyed a pair of white socks khaki coloured with coffee...well...I got a hole in the heel...so after dinner...I darned that with some white cotton yarn...
...and then put them back into a pot of coffee coloured water to dye the patch...

~Wishing you a lovely start to your week!

  1. The darning on that shirt looks great! I have a few like that....my washing machine seems to abuse my clothes a bit.

It's a "new phase" in your life when you take over the kiddo's room! Love, K

    1. Hey K,
...yep...I've definitely taken over...we can still use it as a spare bedroom with the blowup beds if we need to...
      Love,
