...I got out my old Christmas shaped cookie cutters...
...I adapted this Crunchy Spice Cookie from Epic Mint Leaves into a 'cut out cookie' gingerbread...
...this is his recipe...
👨🍳 Crunchy Spice Cookies Recipe
¼ cup (60 ml) almond butter
¼ cup (60 ml) maple syrup
¼ tsp chai spice or gingerbread spice (my blend: star anise, coriander, cinnamon, fennel, ginger, clove, cardamon, nutmeg)
½ cup (55 g) pulverized oats (just blend them), gluten-free oats work, too
...I just used pumpkin pie spice for the spice blend...
...and I poured the batter onto a sheet pan...and since it's liquid at this point...I baked it for about 10 minutes...and then used the gingerbread man cookie cutter...you can see it's still a bit wet in the middle...
...and then I dropped the cookie cutter onto one of the little guys and messed him up a bit...
...
...and then I baked it a little bit longer and then pulled it apart...I'll just nibble on the little in between bits...
...and then baked until the edges started to brown a bit...
...ok...these were delicious...and super easy...especially if you're looking for some gluten free gingerbread...I'll definitely be making these again...
