However they are so useful in an emergency that we offer the following treatment which improves them considerably...
...remember that this book was written in the early sixties...and maybe canned onions were more of a 'thing' then...and there are a couple of varieties of canned onions for sell on Amazon...maybe for preppers...but they are already chopped and sautéed...and Julia is obviously talking about small boiled whole onions...I can't even find an old image of such a thing on the interwebs...but they sound sort of like jarred cocktail onions...
...so I searched Amazon and found some cocktail with just a few ingredients (onions, water, sea salt, acetic acid, citric acid)...and since she comments that the ones she had tried were overly acidulated...I thought that these would do just fine...kind of spendy though...over $8 for a side dish...
...we had it with veggie burgers and air fried potatoes...it was a pretty good and expensive side dish for that particular meal...
