...9.29...Over the Weekend...

...I made another homemade Poppi before we went shopping...
...this one is about half juice - the antioxidant one from Aldi...
...and then one can of sparkling water...1 tsp of ACV and one grind of pink salt...and one packet of stevia...it's really pretty good...
...and just a completely normal shopping trip this week...we got everything to make a covered dish for a Church supper...more on that in a bit...
...and now that it's officially fall...(it just doesn't feel like it yet)...it's time to plant the winter garden...
...so I got a couple of square feet ready for a lettuce bed...
...and past the pepper...I got a another square foot ready for the Napa cabbages that we started in pots on the porch...just in that short time...the roots filled up the cups they were planted in...
...and then I got all of the first two pots of lettuce planted...
...it's a lot of lettuce...but we eat a lot of lettuce...and I did a better job of spacing them out this year...
...and three neat little rows of Napa Cabbages...
...then I picked the green beans...they're really slowing down now
...just a few more handfuls probably and they'll be done...and that's ok...because I'm just about ready to need their square feet of ground...haha...
...I put the second pot of lettuce beside the marigolds and I'll plant them later...after I pull up the pepper and eggplant...
...and I picked the dried cowpeas...I kind of counted them while I was picking them and there's over 100 peas this time...and still a lot on the plants...
...we had a covered dish supper at the Church on Sunday......we used this recipe which she calls North Dakota Casserole...a everyone we knew in North Dakota really did call this "Funeral Hotdish"...
...just using Impossible instead of the ground beef...
...I don't often cook an entire box of pasta...that's a lot of pasta...
...then add the tomatoes...and I dont' know where the rest of the photos are...but we just followed the recipe...
...but while the oven was one for the casserole...I baked a tray of tofu for the week...
...and in other food prep news I Gridder-ed some green beans and Brussels sprouts out on the porch...

~Wishing you a lovely start to your week!

  1. Cute that they call the casserole Funeral Hotdish but I guess that's a perfect name for it! Love, K
