Pocket Cooking

I remember many years ago seeing some commercials on TV for Reynolds wrap - where they demonstrated cooking in little foil pouches...
We have done this while camping too - but it's a great way to cook up some roasted potatoes with peppers and onions...

Just lay down a sheet of foil and put your potatoes, peppers and onions on it - sprinkle with salt and ground pepper and a drizzle of olive oil...

Top with another sheet of foil and crimp the edges...

Bake at 350 about 30-40 minutes until everything is done - it was delicious - the onions and peppers were nicely sweet and carmelized and the potatoes were perfectly roasted - delicious...

...these are still the pretty red potatoes from our garden - I'll have to take a picture of our storage area...

  3. I have cooked fish like this, but what a great way to cook vegies. I like the fact that the clean process of the baking tray would be a lot easier too. I am going to give this one a go.
