...Vegan Almond Coffee Creamer...

...did you know that you can make a delicious coffee creamer from two simple ingredients...almonds and dates...or three if you count water...
...I used a cup of almonds and 6 pitted dates (cause I like my creamer pretty sweet)...I soaked both overnight...and put them in the blender with 2 cups of water...
...blended it up...
...and strained it...
...ok...4 ingredients if you like your creamer with vanilla...and I do...
...see how it coats the spoon...and you can make it without the dates and vanilla and use it in the place of cream in savory recipes too...
...I save the almond meal...and usually just add it to baked goods...cookies or cakes...in place of part of the flour...
...then I pour it into a jar and keep it in the fridge...where I use it up in just a few days time...as I probably add 1/2 a cup to my coffee...it's so good...

Vegan Almond Coffee Creamer

6 medium pitted dates...soaked if they're not soft...
1 cup raw almonds
2 cups water
1 tsp vanilla
pinch of salt

Place all ingredients in a blender and blend until completely smooth...strain through several layers of cheesecloth or a jelly bag...

  1. This is so creative! I love how you used the almond paste too. I am sure this is cheaper and more delicious than in the in-store vegan creamers!

  3. My daughter has discovered nut milks. I love them as well and will use them on porridge which I don't like with cow's milk. I usually just make it with water and add golden syrup, yum!
