...What I Ate Yesterday...as a Vegan...

...toast and tofu for brekkie...and a friend gifted us with a jar each of blueberry jam and strawberry jam...so I tried both of those...and they were delicious...
...for a snack...I had gotten some peaches at the grocery store...and they are just as crisp and hard as they look in this photo...definitely going into a smoothie until the really ripe freestone ones are ready a little bit later this year...so that was a fail...
...lunch though...was a delicious tofu sammie...toasted Our Favorite Vegan Whole Wheat Bread, homemade vegan mayonnaise, lettuce, tomato, and pickled red onions...so...so good...
...afternoon snack...much better than morning snack...pear, pecans, and romaine lettuce...
...for dinner...I was on my own as the Man had a meeting...and I had this strange hodgepodge of leftovers...so that's what I ate...while watching the first 4 episodes of Shada...the 'lost' (unaired) season 17 finale of Dr. Who...the surviving clips are narrated and explained by an older Tom Baker...
...and finally for a snack I had a bowl of Trader Joes Raisin Bran topped with a handful of raw oats and almond milk...
...a yummy way to end the day...

  1. The tofu sammiw is awesome! I must try those pickled onions.
    Yesterday we had "bacon" (made with rice paper) and "eggs" (made with silken tofu) with baked beans and potatos. With greens.

      ...I've tried the rice paper bacon with good results too...and I saw your eggs they looked awesome...I tried a new potato skin bacon that was pretty good too...

  2. For once I have an interesting tidbit to share. We had the boys over for a little cookout last night. I had stopped at Aldi (I LOVE Aldi!) and had picked up several boxes of their vegan burgers. Asian, Thai, Black Bean and regular Veggie. We cooked up some of each on the grill - they were really good! We used Hellman's vegan mayo on the burgers and coleslaw. Dorito's Sweet Chili chips and rounded it out with Bush's Vegetarian beans doctored with carmelized onions and BBQ sauce. A nice vegan meal!

      ...yep...I have liked the Aldi burgers that I've tried...I haven't had the Asian or Thai ones yet though...I've been making my own mayo...as I can't seem to get through a jar of the hellman's before it's out of date...maybe I just need to eat more...
