...9.10...What I Ate in a Day ...as a Vegan...

...I took my vitamins with nettle tea...and then I had a bowl of cereal and fruit with homemade almond milk...

...and then no snacks...I'm trying not to be so snacky...as I think I've been snacking too much since we've been home so much...and I'm trying to cut back...
...then for lunch...I found some of those carrot hot dogs in the freezer...and thought I'd just have them like we used to have hot dogs in sauerkraut when I was little...it was really good...
...and I just steamed some broccoli to go with that...these were supposed to be 'spears'...but the bag must have been mislabled...because they are just florets...weird...
...and then to make up for not having any snacks all day...I made a HUGE supper...we're still eating from that big bag of yellow squash that we got last weekend...and it is so very good...I just sliced up one...dusted it with cornmeal and put it on the Foreman Grill...

...and that odd looking thing on the side there...is the cornmeal that was leftover from the dusting...I didn't want to waste it and I didn't want to put it back in the canister...so I just mixed it with a little bit of almond milk and 'baked' on the grill alongside the squash...it worked perfectly...and no waste..yay!
...sliced up some Crudités...carrot, cucumber, tomato, and green pepper...
...and made one of my deconstructed salads...romaine leaves, orange and walnuts...
...and finally got a couple of muffin cups of beans out of the freezer...
...see...it was really a lot of food...and I was hungry...I crumbled that weird cornbread-y thing into my beans...it was all delicious...

  1. Your food all looks delicious. I don't remember what I ate when I awoke but for dinner I had a nice big shrimp salad with romaine lettuce, red onions, grapes, cucumbers. It wasn't enough protein so later I ate a grilled cheese on marbled rye bread. I had some chocolately snacks somewhere along the way. Thursday night now and I'm making berry muffins to take to the park when I visit with a friend. Our first time together in over 6 months and probably the last until next Spring.

  2. I've decreased my snacking over all. I just need to make sure I don't get lazy for lunch. My body loves a salad every day but my mind is like let's eat some leftovers.
