...9.3...what I ate in a day...as a vegan...

...regular cereal and fruit breakfast...
...morning snack was another apple and some nuts...
...for lunch I cooked an orange sweet potato on the Foreman Grill...
...and some broccoli...
...and I had that with some spinach, tomato and black-eyed peas...
...for an afternoon snack...I had some frozen edamame...I love edamame...and I usually only have it at an Asian restaurant...so this was a real treat...and I should definitely do it more often...so fun to eat...
...and then dinner was a variation of lunch...I ate the other half of the broccoli and spinach...but made the last purple sweet potato and had that with some baked tofu...it's not pictured but I put Heinz 57 on the tofu...

  1. Nothing as colorful as your meals! Cereal, banana and vanilla almond milk for breakfast, leftover greek pizza for lunch, Caesar salad for dinner and a couple of lemon sandwich cookies - which are undoubtedly not healthy but they are vegan! Love, K

  2. I am curious about the purple sweet potato. Can you describe the taste? I've seen them in stores but haven't tried any yet. For dinner yesterday I made basmati rice and chicken (breast), potato curry. It hit the spot.

      They are very dry and starchy and not terribly sweet...I find the regular orange ones to be more flavorful...the way I cook them...on the Foreman Grill...maybe I should try boiling them though...and here they cost twice as much as the orange ones...so I don't think they are worth it for me...

  3. yummy. you are making want to buy a George Foreman grill LOL, that grilled sweet potato always looks so good. I always steam sweet potato, and I really like it with some beets, plus I love the color combo of the two together. I have only ever scrambled tofu, I need to get a little more adventurous with it. My husband really likes Heinz 57 sauce, I always keep a bottle in the fridge, and a spare in the pantry.
    I was kind of boring yesterday, didn't feel like making dinner so had a bowl of plain oatmeal.

      ...oh...the beets sound like such a good accompaniment to the potatoes...I'll have to try that...and I'd definitely recommend a Foreman Grill...we got ours second hand for $5...and it's just a basic model...but I use it a lot!
