...1.7...What I ate in a Day...as a vegan...

...Breakfast was a bowl of cereal...mixed up with some raw oatmeal and a chopped apple...
...this was my 'proper' lunch...a bowl of bean and barley soup from the freezer...and a cup of rice and some cucumber and tomato...and tea...of course...
...and then a couple of hours later I was hungry and I got these little bits out of the fridge...it's about 1/2 cup of leftover green beans and about the same amount of leftover vegetable soup...not really enough of either for a meal...so I thought I'd just eat them up...and a vegan cornbread muffin from the freezer...so that was a substantial snack...
...then in the afternoon...the Man was making these baked apples for dinner...and he actually ate his portion with dinner...like a normal person...
...but I ate mine before dinner as a sort of late afternoon snack...while we were in the kitchen preparing the rest of dinner...haha...
...and I'm still eating a banana every day...with some flax seed and some walnuts and one Brazilnut...
...I usually break my banana in half and 'dip' it into the flaxseed...just the right amount clings to the banana...it's pretty yummy...
...and then finishing dinner...I baked some red potatoes with chunks of peppers and onions...I love this combo...but the Man hardly ate any...so I'm guessing it's not a favorite for him...
...and I had it with some baked tofu, homemade saurkraut, collard greens, fried green cabbage and cornbread...the little bowl just has some broth in it for a nice warm starter...
...in other news...this is Jack's new 'diet'...we had to take him to the vet because he was feeling pretty poorly...and it turns out he has pancreatitis...and the vet wants him to lose 5 lbs. before the end of February...and they'll re-do the blookwork then...

...poor pup...it will probably be harder for me and the Man not to give him treats all day...I'm going to put a handful of his kibble in a cup on the counter so that if he begs for a treat I can at least give him a couple of kibbles...

  1. Poor Jack! Can he only have the food from the vets? Our dog loves carrots and cucumber, so thinks it's a great treat to have a slice of cucumber of a strip of carrot peeling.

  4. Our poor dog is also on a diet, he has to lose 4 pounds. Not an easy task!
