...we cooked up some of the veg that we'd gotten over the weekend at the Farmer's Market...
...we just roasted the colourful beets...we had the regular red/burundy ones...some white/pink ones and some yellow ones...
...they roasted up perfectly...but you know what...the red ones are definitely my favorite...
...and then we made a squash casserole with the squash...the Man had the bright idea to sauté the squash first...
...and the onions as well...
...and then we layered it up...and poured over the Vegan Egg...
...topped it generously with some Violife cheddar...
...and baked that in the oven as well...

Hey, those beets looks yummy. It’s been quite a while since I’ve had beets. We haven’t been eating anything too spectacular lately. Ha ha.
