...we had a couple of hamburger buns left over from our Vegan Big Macs and I wanted to use them up...so we made hamburger bun toast to go with our tofu scramble...and we had a couple of really mild jalapeƱos so we used those and some onions to make the scramble...
...then of course we headed out to do the shopping...
...just the usual...
...for food prep this week...I chopped a block of tofu into tiny cubes...
...to make tofu feta...I may have overcooked it a bit...I was really just trying to dry it out...
...then I added some lime juice to a bunch of cilantro and gave it a blitz in the food processor...
...then divided it into little guacamole-sized packets for the freezer...
...made a batch of tofu sour cream which I promptly turned into Vegan French Onion dip...
...we pulled up the last six little green onions in the winter garden...
...one of them had made a little seed pod on top...so I may try and grow some in a pot on the porch through the hot summer months...
