Every couple of weeks we have a build-your-own pizza night. I make the dough and pat it into 3 circles - here's the neat part - I don't know why I never thought of it before - I used parchment paper to line the pans - and Voila - perfect crust. I already knew that parchment paper was the secret to perfectly browned crispy cookies - but I had just never thought to use it for pizza. This is my pizza with some of the vegan parmesan my sweet sister sent me - thanks - it's very good.
