I'm back with a quick post - here's the zucchini bread recipe from the 3rd grade cookbook:
ZUCCHINI BREAD
1/2 cup flax seed goo
2 c. sugar
2 c. grated zucchini
3 tsp. vanilla
1 c. oil
1/2 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
3 c. flour
2 tsp. cinnamon
Mix flax seed goo and sugar, then add all the other ingredients. Divide into two bread pans which have been sprayed with cooking spray - or lined with parchment paper. Bake 50 to 60 minutes at 350 degrees.

What is flax seed goo? Is that original to recipe or your conversion? Looks like you had a great Mother's Day, too. E
ReplyDeleteNo - the original recipe called for eggs, but I make an egg replacement from flax seed - just boil them in water and strain off the 'goo'. It works really well and has a very egg-y consistency. Plus it's loaded with omega-3's.
