...whenever I make a big pot of spaghetti...or soup...or beans...that we don't consume in one sitting...I usually know that there's no point in just putting it into the fridge...because we're just not likely to eat the same thing again in the next few days...so...of course I want to freeze the leftovers...and have an easy meal at some future date...
...but a big bowl of frozen soup takes forever to thaw...and then what if we don't eat all of it that time either...refreezing it sounds chancey...
...what I needed was an easy way to freeze individual servings...and I'd prefer not to have tons of plastic containers...
...so...I use my muffin tin...lined with plastic wrap to make little individual servings...
...I just measure a half cup into each well...
...after they're frozen...they pop right out...
...labeled and ready for the freezer...and a future lunch or quick supper...
