...a bit more snow...a delay...and some tofu Cottage Cheese...

...well...we've had a bit more snow...this is such a crazy winter...sort of like North Dakota...except that the snow goes away (mostly) between times...

...so Scout had a 2 hour delay for school today...

...and I had time to make some tofu cottage cheese for breakfast...
...not that it takes a lot of time...just a few slices with the little egg slicing gadget...slice one way...
...then pick up the cube and turn it over...slice again...
...and turn and slice again...
...and you'll have a bunch of little cubes...
...mix in the spices...
...and the creamer and vegenaise...
...chill and it's ready to serve...
...we had ours with some pineapple...it was very good...

Vegan Cottage Cheese

1 lb tofu, medium drained
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon ground dill seed
1/2 teaspoon lemon juice
1 teaspoon salt
1/4 cup Vegenaise
1/4 cup Plain Silk Creamer

Directions:

1 Cube tofu into little cubes.
2 Stir in the spices.
3 Stir in the creamer and Vegenaise.
4 Chill and serve.

  2. We have rain, rain and more rain - not to mention the gales! However, at this moment the sun is shining. Because it has been mild we have lots of spring flowers out!
