...it's definitely soup weather...
...and this thick and creamy Vegan Cheeseburger Soup really hits the spot...
...gather your ingredients...garlic...(ignore the nooch...I got it out because I thought I would need it's cheesiness...but it turned out that the soup was delicious without it)...an onion...vegan broth, raw cashews...petite diced tomatoes...Beef flavored TVP...arrowroot powder...and tomato paste...you can't see it in the photo...
...cook the onions and garlic in some oil...
...add the tomatoes...
...and the TVP...
...while the soup is cooking, add vegan broth and cashews, arrowroot flour and tomato paste to the blender and blend until completely smooth and creamy...then add that to the soup pot...
...and cook until heated through...
...serve topped with some chopped lettuce...and a frothy vegan vanilla shake...
...so good...
VEGAN CHEESEBURGER SOUP
1 Medium onion, chopped
3 cloves garlic, minced
1 cup beef flavored TVP
1 can petite diced tomatoes
2 cups vegan beef broth - I used 2 cups of water and 2 Tbs of powdered vegan beef broth
3/4 cups raw cashews
2 teaspoons arrowroot flour
2 Tbs tomato paste
Cook onion until translucent and soft
add garlic
add tomatoes
add the TVP
while the soup is cooking, add vegan broth and cashews, arrowroot flour and tomato paste to the blender and blend until completely smooth and creamy
then add that to the soup pot
Cook until nice and hot...
