...we have a rather disjointed breakfast routine chez affectioknit...
...Scout gets up first...before 6 AM...I usually just sit with him while he has his cereal/granola breakfast...then about the time he leaves the Man gets up and makes coffee...which is quite a production...he's such a coffee snob...I'll have to do a whole post about it...and my brother/coffee roaster is such an enabler...
...so I usually have coffee with him...with lots...and lots of homemade cashew/almond creamer...and he has breakfast...but still I usually am not hungry enough to eat yet...
...but sometime after he leaves the house...usually about 8 AM...I'm ready to have my brekkie...
...so with no one to please but myself...I often make a single serve muffin...like this banana bread one...
...I start with some mashed up banana...
...3 Tablespoons...
...add a teaspoon (or two - depending on how ripe and sweet your banana is) of brown sugar...
...smoosh that all up together...
...add a quarter teaspoon of vanilla...
...and 3 tablespoons of pastry flour...
...a pinch of salt and baking soda...
...give it all a stir...
...and add a big ole pinch of cinnamon...
...and a few pecans...just break them up a bit before adding...
...give it another stir...
...then sprinkle a little more brown sugar on top...
...microwave for 1 minute...of course microwaves vary...so check it after a minute...mine takes a minute and a half...
...it's a perfect breakfast for one...sweet and cinnamon-y...so good...
3 Tablespoons mashed banana
1 - 2 teaspoons brown sugar
1/4 teaspoon of vanilla
3 Tablespoons pastry flour
pinch of salt and baking soda
generous pinch cinnamon
a few broken pecans
another teaspoon or so of brown sugar to sprinkle on top
Stir all ingredients together except the topping sugar and microwave for 1 minute.
Of course microwaves vary...so check it after a minute...mine takes a minute and a half...

Love, Love, Love this idea! Genius! With only one child left at home, and a picky breakfast eater at that, I will try this out for her ~ along with myself when I am craving something sweet. Pinning it now!
