...What I Ate Yesterday...As a Vegan...

...I started off the day with one of my favorite breakfasts...Cheerios and bananas...these aren't really cheerios...they are organic toasted oats...but still nostalgic for me...
...later in the morning...I sliced open a perfect avocado...
...and made some avocado toast...
...with some tofu and tea...
...then one of our gardening parishoners dropped off a bag of garden veggies...
...so I sliced up some of the yellow squash...
...and made a small squash casserole for lunch...
...and just had that with some veggies...and tofu...of course...
...this is the 'pullable' seitan I made the other day...adding the cabbage shreds worked perfectly...
...so we had BBQ chick'n sammies, french fries, sauerkraut, carrots and slaw...and kale from my Mom's garden in the middle...and baby limas on the side...
...and the new jar of sauerkraut is progressing nicely and it's a good thing too...as you can see my current jar is almost empty...I have the making of the new jar timed just right...
...my sweet sissie forgot and left her bag of smoked almonds here...so I've been snacking on those all day long...so yummy...

  1. We went to see Oklahoma at the Chichester Festival Theatre yesterday evening with daughter and daughter in law. I made The Doctor's Kitchen Ethiopian Berbere Curry. I replaced the special spice with curry powder and a teaspoon of smoked paprika.   2. As usual, that was a colorful food day! We've been eating the same batch of TVP spaghetti for the past 3 days, finally finishing it last night. 2 days was good. The third was just a little too repetitious.
