...for Breakfast...I had saved a half of a raw potato (because the bag of Idaho potatoes I had bought was all rather large sized potatoes and 2 of them was too much for the two of us) from last night's supper...in a jar of water in the fridge...so I diced that up...
...and browned it in my Foreman Grill...of course...
...and I had that with a cup of coffee with cashew creamer...and a half of an everything bagel with some homemade vegan cream cheese...
...for lunch I made two sandwiches...this one is cucumber over homemade vegan cream cheese...sprinkled with dill...
...and the last two small gifted homegrown tomatoes...and vegan mayo...with tea of course...
...dinner (sorry for the horrible photo)...it gets dark so early now...haha...was baked tofu, roasted potato and Foreman grilled broccoli and Brussels sprouts...'dessert' was my banana, black walnuts and flaxseed for the day...(I always eat that for potassium and omega 3 & 6)
...I also had a few snacks...but they were pretty healthy...
...a handful of pecans and a Medjool date...if y'all haven't tried this...you definitely should...it's like eating a candy bar...
...and I also had an apple...
...what did you eat yesterday?...

Much more boring than your eats!! Bran cereal/almond milk/sliced apple for breakfast, leftover Greek pizza for lunch, an apple for snack and a one-pot green bean/potato concoction that Cathy made in her insta-pot. And ginger snaps for dessert as we chatted over a glass of Cabernet. Love, K
ReplyDeleteHey K,
DeleteThe green been concoction sounds yummy...you'll have to post the recipe...
Love,

You had some good eats. I like the colourful tomatoes. I had bowl of bran flakes with coconut-almond milk for very late breakfast. For dinner, I made a pot of pasta and stir fry of broccoli, cauliflower, onions, red peppers and very large prawns in a garlic-soy sauce. I too had an apple yesterday, a Pink Lady. I bought two types on my last stop at the grocery because they seem to be featuring apples right now. The other is call Gala. My favourites are: Fuji, Honey Crisp and Pink Lady.
ReplyDeleteHi Penny,
Delete...I think that pasta stir fry sounds good...and I love pink lady apples too...but I like Gala and Fuji too...usualy I buy whichever organic ones are on sale...
