...10.30...Dinner and a Movie...

...it's Pizza Night...
...we had seen Vito's video outlining how to make perfect pizza in a home oven...so...yesterday...we made the poolish...he uses the word a lot...and it's basically a sponge...and we put that into the fridge for 24 hours...a little less actually because we wanted to have the pizza for dinner...and it still has to rise again...
...the Man made the delicious sauce...
...we got our 24 hours old poolish out of the fridge...
...mixed in the flour and salt...
...let it rest...
...divided it into 9 oz. balls...and covered it tightly with plastic...there was a little bit left over...
...let those rise a bit...a couple of hours...
...and then...since we don't have a peel (yet...haha)...I used the back of a pizza pan generously coated with semolina flour to press and pull the pizza dough into shape...trying not to press out any of the air bubbles...from center out...leaving a rim...
...added some sauce...
...grated some Violife vegan parmesan...
...a light covering...
...added some vegan mozzarella...and then slid the pizza off onto the only stonewear that I have...an old Pampered Chef sheet pan...
...while it was cooking...I took that little leftover ball of dough...and made a little olive covered flatbread with it...
...we had cranked the oven up to the max...550° F (288° C)...so it cooked pretty quickly...
...and then the little flatbread was done as well...
...it was so delicious...absolutely perfect...crispy...chewy pizza...
...so I made another one...and we put it in the fridge for later...
...it also came out perfectly...

...and the move was just a couple more episodes of Yellowstone...just watching the Dutton family continue their downward spiral into baseness...

      ...we do love pizza...both the homemade variety and the restaurant kind too...I'm going to try and keep the starter in the fridge to make it easier to have pizza on the spur of the moment...

  5. Mmmmm...looks good. I love pizza!!

    We have almost identical bowls--the blue one in the top picture. I am pretty sure ours has a different image inside the bowl, but the outside part is exactly the same.

      ...that's neat...these ones were an 'antiquing find' gift from the kiddos...there are children climbing over a gate in the image...

    2. They are different-but-the-same then. Ours has a sledding scene.

      This set was a gift from my step-mother who, apparently, bought them in the 1980s and never used them. She moved three towns and a half-dozen or more houses and finally decided someone should use them. So, we took 'em home. They'd sat in a box in storage long enough.
