...12.30...What I Ate in a Day...as a Vegan...

...well...there's been a whole lot of snackin' going on...we had a lot of food left over from the party and we're still trying to use it all up...
...but for breakfast...I made pancakes...I'll post the Christmas gifties tomorrow...so you'll get to see the Man's cute little maple syrup...
...Mom made her delicious Ritz cracker/peanut butter/white chocolate cookies and brought me a big bag...
...so I put those in a half gallon jar...and I'm trying to ONLY eat one of them per day...haha...
...my sweet nephew and his wife had brought a big bowl of vegan Chex mix to the party...
...so I've been snacking on that as well...and it's almost all gone...
...and this crinkly bag of peanuts was in my stocking...
...I love peanuts this way...roasted in the shell...
...aaaannddd...I've also been snacking on the leftover hummus from the party...the veggies are almost gone...but there's still plenty of pita...I think I may freeze the hummus to enjoy later...haha...
...and I know you're wondering how I could possibly eat any lunch...well...we were chatting with Mom about how nothing else is quite like Campbell's soup...and it got me hankering for a bowl of tomato soup...so I looked up Copycat Campbell's Tomato Soup and found this recipe...
...I had everything on hand...and it was super easy...
...not exactly like Campbell's but pretty close...
...I always have my tomato soup with Ritz crackers crumbled in it...just like my Daddy...
...and...I'll show you this new Foreman Grill tomorrow with all the other pressies too...I'm still getting used to it...
...and since we were wanting something a little bit different from the Christmas fare we'd been eating...I made a pot of kidney beans in the Instant Pot...
...and a pan of vegan cornbread...
...and the Man made us a delicious chili for dinner...
...and I froze the rest of the cornbread...you know as 'hockey pucks'...to have later...haha...

  1. Everything looks so yummy especially the pancakes, cookies and chex mix. The last few times I made pancakes were a total flop. They should be easy enough but I think I haven't been heating up the cast iron enough. I don't own a griddle or a electric fry pan which also work great. Happy New Year to you and your husband. Sorry I'm not commenting as much but I have had enormous issues with being able to leave a post. Not sure how long this glitch will go on for but thankfully tonight I've been able to post a few comments.

      ...I've had trouble with commenting too...we like the new grill so far...but I still kind of miss the old Foreman grill...haha...

  2. WoW! PLenty of things! I love that!
    My father used to word for a company who distrubuted Campbell's soups. I didn't like the tomato soup because of the sugary taste... but in his memory, I will make this soup on his birthday for sure!

  3. The only thing of interest was the yummy biscuits and gravy for breakfast! Your food looks yummy as always. I don't think I've ever thought to make tomato soup, interesting. Love, K

  4. I can't believe I forgot to try those amazing sounding pb-Ritz cookies!! Shoot. I remember hearing about them from you last year and being immediately sold. We still have part of a bar of white chocolate that Matt made for dipping pretzels. Perhaps I'll try it yet, even if they won't be "Christmas Cookies" then. Still, cookies are cookies. ;)

    Chex Mix is one of my favorite Christmas snacks. Matt and his mom both made batches and I've nibbled plenty! Mmmmmm...

    Oh! And I got a Geroge Foreman for Christmas! I'm glad you got yourself an alternative/replacement as I've sure seen how much you use that thing!

      ...we only get the cookies from Mom at Christmas...but you could of course make them anytime...haha...I'm rationing mine so they last longer...and I can't wait to see what you do with your grill...we're getting used to the new one we have...

    2. I mentioned the cookies to Matt and he was absolutely on board for making a belated Christmas batch. He says his mom made them at Christmas, too--though she must have stopped before I joined the family since I first heard about them from you last year. His mom is from North Dakota, too.

      Good luck with the rationing! That's smart in so many ways!
