...1.20...What I Ate in a Day...as a Vegan...

...this would normally be a 'weekend' breakfast...but I really wanted some TVP sausage gravy...maybe because I had tried to order my favorite TVP sausage from Amazon last night only to find that it is completely out of stock...more pandemic supply issues I imagine...so I got some out of the freezer...and a vegan biscuit and a half...at some point I must have eaten half a biscuit for some reason...so I made toast of half of the biscuit-and-a-half and slathered the other one with vegan gravy...it was delicious...and exactly what I wanted...with a big mug of tea and a small cup of OJ...and I had pineapple jam on the toasted biscuit...
...so after that big breakfast...I just wanted a bunch of veggies for lunch...and I'm still trying to master the new grill settings...
...the tomatoes pretty much fell apart...they were still delicious though...and I added some homemade sauerkraut and a sliced cucumber...
...big breakfast...and light lunch...means that I need a couple of afternoon snacks...and I'm still rationing Mom's Christmas cookies...they are such a treat...I only have three left...so you'll not see them again until next Christmas...
...and I had a slice of leftover Nanny's Mexican Cornbread and a sliced apple a little bit later...
...and for dinner more grilled veg...and that's also a grilled potato...not sure you can tell...and leftover Mexican rice and black beans...pretty non-interesting I know...

  1. YUM!!! All of that looks delicious!!! I'm vegetarian, but I cook vegan things from time to time. There are so many great vegan recipes out there. I tried Burger King's Impossible Burger yesterday for the first time, because our power was out and I needed to take my daughter something for lunch, and I was really impressed! I had leftovers of the Moroccan Chickpea Stew I made for lunch today, and for dinner, we're having a southwest pasta dish. :)

      ...we've tried the BK burgers too...you just have to specifically ask for it to be vegan or they run it through the grill with the regular burgers...which seems really weird to me...but the vegan ones are still really good...and that chickpea stew looks marvelous too...we love chickpeas...

  2. My day was not very veggie-intense. Trying to use up leftovers, I put some grilled lobster in my cheese grits (kinda like shrimp-n-grits) for breakfast. Lunch was left over Bush's Veggie baked beans and pasta salad. Then dinner with friends was a lemon-butter-fettecine lobster dish and a green salad. And cinnamon buns for dessert. And we have leftovers. So I expect more of the same. Love, K

      ...the cheese grits sound good...I've not done that in a while...vegan ones of course...and I love the veg baked beans...we have those a lot...your cinnamon buns look delicious too...

  3. Your grilled veggies are mouth watering!

    Yesterday we had Général Tao Tofu that my daughter cooked.
    And a rest of couscous for lunch.
