...1.6...What I Ate in a Day...as a Vegan...

...for breakfast...I had a big bowl of mixed cereal and fruit...with almond milk and tea...
...then mid-morning...I took the Man's leftover coffee and made a cinnamon latte sort of drink with it and some protein powder...it was yummy and perked me right up...haha...
...and then for lunch...this is a throwback to my college days...

...I know it seems strange now...but Ramen noodles were a 'new' thing to me...I'd grown up out in the country and had eaten...you know...mostly simple country foods all my life...I had never even heard the word 'tofu' before I went to university...haha...

...and dorms and university meal plans...back in the day ...were not what they are today...haha...and almost everyone had a hot-plate and a toaster oven either in their own room or a 'shared' one in the suite...

...and I had a suite-mate...Kelly...who had a hot-plate and would often share her mac-and-cheese with me...or this Ramen noodle dish...I think the only thing she did differently was to use half milk and half water to make the noodles...it's delicious and creamy...and salty and savory...and takes me right back to our third floor suite...good times...
...and then...that got me thinking about Kenny...our caf always had a salad bar...and I'm pretty sure that croutons were always available...not sure if it was the fact that they probably were not vegan or what...but Kenny always crumbled saltines on top of his salad instead...and of course Italian was the only dressing that was vegan...

...so that was a fun...nostalgic little lunch...and you should definitely try the almond milk in the Ramen thing...
...the Man was making his Poolish pizza in the late afternoon...so while that was going on...I pulled off a small piece of dough and baked it with some vegan cheese...
...sliced it in strips...
...and dipped it in his leftover pizza sauce...it was a yummy...shall we say...appetizer...haha...
...because I'm still getting used to the new grill/griddle...and it's taking me longer than the Foreman grill did...
...so I was glad that I'd had a snack while I waited...
...I'm using the griddle side of the plates instead of the grill side...
...and I cooked a full griddle of Brussels sprouts and sweet potato...
...and I baked some BBQ tofu (in the oven with the pizza)...and toasted some French bread...

    Yesterday I made tofu in a creamy sauce with plenty of vegetables "on the side".

  3. I love brussel sprouts! I love ramen noodles BUT they have lots of sodium in the noodles so I try not to eat them often. Lovely meals :)

  4. Those are fun food memories. I've never heard of making ramen with milk! Maybe I'll try it out sometime. We baked peanutbutter and jelly thumbprint cookies yesterday for a dinner with friends tonight. We sampled a few. Matt also made seitan and then decided to make philly-style cheez steak sandwiches for dinner with some cauliflower on the side.
