...4.21...What I ate in a day...as a Vegan...

...we had a big breakfast...which is kind of unusual for mid-week...but the pancakes are leftover from the weekend...still really good though...with a tofu scramble...Gardein sausage...and yellow grits...mine of course are salty with EB...and the Man always makes his grits sweet...which I think is super gross...haha...
...for lunch I got a pita out of the freezer and made a sammie...I do love sandwiches...
...just some of the grilled tofu from the weekend...lettuce tomato spinach and vegan mayo...
...for dinner we cooked the beet greens...still trying to use up all that fresh veg...it cooks down to nothing and we got two small servings...
...and I made a pot of brown rice...with a handful of wild rice thrown in...here's how I do that...I basically cook it in a bunch of water like pasta...and then drain it...
...made a big salad...
...and after the comment about the grits I thought I'd show you the difference in our salads...I keep everything in my bowl separate...it can touch but I don't mix it all up and eat it together...but the Man does...haha...
...so we had the rice with tofu and greens and a big salad...

...I think the only snack I had all day was that the Man and I shared two apples...he had gotten Kanzi and McIntosh apples during his big shopping spree...and he said the McIntoshes reminded him of his great-grandparents orchard up in the mountains...and visiting there as a child and climbing the trees and eating their McIntosh apples...so we shared half of each of those...it was fun combination...

  1. Looks yummy and healthy, of course! My meals were not terribly exciting. A big bowl of cheesy grits for breakfast, a little scoop of mixed nuts for mid-morning snack, a salad for lunch and leftover black beans/saffron rice/burritos for supper. A scoop of dried cranberries and a few lemon sandwich cookies for snack. Now that I typed all that, it looks like a lot! Love, K

  2. lovely foods once again. The only apples I like are golden delicious and gala. If forced I will eat others (but not a granny smith!)
