...4.25...Over the Weekend...

...we started the weekend...with a coffee cake of sorts...it's this 1932 recipe from Borden...and we saw it on Glen and Friends YouTube channel...
...just got it all mixed up...it hardly has any sugar in the mix at all...a couple of Tablespoons...
...arranged the apple slices...and sprinkled with cinnamon...
...and baked...
...it's really good...as expected it's not very sweet...we subbed almond milk for the reconstituted Borden in the recipe...
...and it's perfect with a mug of tea...or coffee in the Man's case...it was very moist and I'll probably make it again...
...we picked up a small InstaCart shop...and Jack inspects it for us...
...not a lot...we're still trying to use up all that veg the Man bought...haha...
...but right after that...I refilled my mug of tea...and finished the puzzle...
...the very last piece...
...so satisfying...
...now I'll box it up and give it away...
...in the afternoon...we had a funeral...never a fun affair but the weather was gorgeous...
...I made croutons...
...just a drizzle of olive oil and a sprinkle of garlic powder and Italian herbs...
...and now I've got 3 jars full of delicious homemade croutons that don't hurt my teeth...haha...
...speaking of all that veg the Man bought...we roasted the poblanos...
...put them in a bag for a bit...
...so the skins would get all crinkly...and they'd cool off...
...peeled them...
...and then stuffed them with vegan cheddar/cream cheese and bread crumbs...and that made a delicious early supper...
...Sunday after Church...I baked some Whole Wheat bread...well...technically I dumped it into the bread maker...and it baked it...haha...
...it turned out perfectly...
...our spring weather still continues to fluctuate considerably...it's been up to 80° (27° C)...so I needed some new bike shorts for riding...and I got these for $3...I'm really happy with them...they have a little pocket for my phone/keys...and they also have a strange little mesh panel on the side...not sure what that's for...
...and this is a men's tank from the Dollar store...so it cost $1.25...and I just spent about 5 minutes trimming it down to size and sewing up the side seams...it's nice and long as I like it for good 'coverage'...haha...
...y'all have seen this process before...I turn it inside out...
...and stitch across the shoulders to take out some of the roominess under the arms...
...and then I mark that on the sides and take it in a bit more...
...and it's finished...
...and finally someone got a bath...and she's none too happy about it...

~Wishing you a lovely start to your week!
