...7.7...What I Ate in a Day...as a Vegan...

...for breakfast...I made some cheeze grits...I just cooked the grits the regular way with water...4 to 1...and then broke up a couple of slices of Violife cheddar in the pot of hot grits...
...made some homemade bread toast and tofu sprinkled with kala namak to go with it...so yummy...I love cheeze grits...
...mid-morning...I cooked an InstaPot full of chickpeas (garbanzos)...mostly for the freezer...just to have ready on hand because I don't usually buy the canned ones...
...and then I filled all of the muffin cups with chickpeas and got that into the freezer...and a quart jar for the fridge...
...and there were still some leftover in the pot...so I searched the ol' blog and found a curry recipe my sweet sissie sent me...years ago... (2010)...
...that was a delicious lunch...
...and for dinner...the Man had gotten some new noodles...y'all know my noodle preference is for Angel Hair (cappellini)...which the Man doesn't like...and he's much more particular about his noodz than I am...haha...
...but he makes a delicious sauce regardless of what noodles you put it on...

...what did you eat yesterday?...

~Have a lovely day!

  1. That curry looks delish...I vaguely remember it - lots of spices! Funny, my Man doesn't like angel hair pasta either! Love, K

  4. Matt loves angel hair and it is probably my least favorite of the noodles. ;) That curry looks GREAT.

    1. Hi Beth,
...it's funny when there's a difference in taste like that...here...I usually boil the water and cook my angel hair...take it out and then boil the Man's pasta in the same water...
