...Vegan Southern Biscuit for one...

...sometimes...

...you're on your own for breakfast...but you want a big ol' southern biscuit with some apple butter on it...

...but you don't want to make a whole pan of biscuits...'cause...although I do eat leftover biscuits (usually toasted)...everyone knows they're much better hot and fresh from the oven...'
...so...gather just 3 ingredients...some vegan milk - I'm using almond milk but it doesn't really matter...and some vegan butter...and some self-rising flour...
...scoop 1/3 cup of self-rising flour into a bowl...
...and add 1 teaspoon of Earth Balance...
...then sort of using Julia's frissage technique...
...just smoosh the butter into the flour until it's well incorporated and sort of crumbly looking...
...then add enough vegan milk to make a soft dough...about 1/4 cup...
...and stir...
...I was going to say that this would only dirty up one bowl and one spoon...except for this step...and it just makes the biscuit so much better...crispy and golden brown on the outside...you'll be glad you used another dish...

...melt some Earth Balance on a saucer...
...scoop your dough onto the melted EB...
...then shape it into a biscuit...and flip it over to coat both sides with the buttery goodness...
...then slide it off onto a pan...
...and bake in your toaster oven at 450° F for about 15 minutes until golden brown...
...then pour yourself a mug of hot tea...
...slice that biscuit open...
...slather it with Apple Butter...

...and enjoy!

  1. That does look so delicious. I had my first biscuit in France - cooked by an American - and I loved them. I did think they were like plain scones though!
